I am amazed that so many of the prepper youtube channels, do not talk about buying sprout seeds to keep with your preps. If something happens to the food supply chain in the winter months, you still have source for fresh salads. So needed for good health when things are scary.

I grab a tablespoon or so of sprouted lentils to hold off till dinner. It's working! (and I love the taste) I add wheat sprouts to a small portion of yogurt - the added texture is very satisfying. Can't go wrong with my broccoli/alfalfa/clover mix on a salad. Adds sufficient flavor so little or no dressing is needed.

I used to work for Mountain Valley Seed (now True Leaf) and started sprouting seeds with my brother. He still works there, and he never cautioned me against protecting them from sunlight. He did note corn (maize) microgreens needed to be grown in the dark.

I recently learned that when you have too many sprouts to eat before they go bad, you can dehydrate and powder them.

In the 70s, the hippie earth mama days, I learned a lot from my kinda hippie friends. We grew sprouts in quart Mason jars. Used 1tsp of Alfalfa seeds. Covered the top with old clean pieces of pantyhose. Screwed on the top without the lids. Rinsed and drained several times. Shook the seeds along one side and laid the in the corner of the kitchen counter. Rinsed and drained everyday. Within a few days the jar was full. Used on sandwiches, salads, etc. Delicious! The pantyhose thing would probably be poopooed today but nobody got sick. Who wears pantyhose today anyway!?!?

Sprouts are nutritional powerhouses! My favorite is broccoli or alfalfa sprouts added to a peanut butter sandwich. Sometimes I add raisins for a little sweetness and sometimes I fry some veggie bacon until crisp for a really nice flavor and add one or the other to my sandwich before adding the sprouts. You can also toast your bread if you like or vary the variety of bread you use. Sprouts are hard to find where I live so thanks for the link.

In the Grand Canyon, the ancient Hopi Indians would create granaries which are little caves that they sealed up with stone and clay. They would store their seeds and place a small fire in the granary just before sealing it airtight. In essence, they created an oxygen free dark storage location to store seeds until the following year.

I use an insulated cup for sprouting my broccoli, lentils and wheat, Have tried many seed and these are my favs for nutrition, quick germination and flavor.. Cheapie from walmart. Has a slot in top for air and for easy rinsing. Only one batch ever spoiled but I recently learned about rinsing with citric acid so will start that.

Sprouts are great, I often use buckwheat for dehydrated "raw" bread, soft wheat is great, too...but, alas, the seeds for the typical small sprouts are terribly expensive here in France, I just use whole grain.

Is there any reason why a hosiery sock over the mouth of the jar wouldn't work? I use that method for sourdough and it's great. Use whatcaha have, yes?

the main concern with sprouts are 1. mold, and 2 e.coli both are pretty well dealt with by keeping your preparation clean and using clean water (and changing it often enough) or sterilizing the growing medium

I rinse morning and night, and that works just fine. Alfalfa, mung beans and lentils.
