Prepper Pantry Recipe for Food Shortages: Extreme Budget Meal

Here is an easy and healthy meal that can be made from items in your Prepper Pantry today! I used my instant pot and the recipe was absolutely delicious and very filling! This is a great extreme budget meal to know, especially during times of food shortages. You can still eat for $1 per serving in 2024 and in this video, I show you how. This is a great staple to incorporate and will likely become a family favorite! The recipe is below. Enjoy friends!

Lentil and Pasta ~ Budget Meal
Ingredients:
1 cup dried brown or green lentils
1 cup short pasta shapes
4 cups of broth or water, plus more if needed
1 can of diced tomatoes
1-2 Tbsp olive oil, plus more for drizzling
3-4 garlic cloves, minced
1 medium-sized onion, diced
1 Tbsp tomato paste
1 tsp ground cumin
1 tsp ground oregano
2 bay leaves
Salt and Pepper to taste
Instructions:
Heat oil in a large pot over medium heat or instant pot.
Add onion and saute' for 3-5 minutes.
Add garlic, tomatoes, bay leaves and stir for a minute.
Add lentils, cumin, oregano, tomato paste, broth, salt and pepper.
Bring to simmer. Place lid on and simmer for about 20-25 minutes or until lentils are soft.
Taste and adjust the seasoning according to your preference.
Add pasta, cook gently over medium heat until soft. If the meal seems too thick, gradually add a touch of water or broth and thin to desired consistency (please note: the longer it sits on the stove or in the instant pot, the thicker it will get).
Serve with a drizzle of olive oil and additional salt and pepper.
Optional items include parmesan cheese, chili flakes and chopped parsley for extra flavor.
