Whether it’s using a microplane for grating Parmesan, smashing and dicing the garlic, how to make perfect pizza dough, to break up the brown sugar while adding, adding wine & cracked blacked pepper to various meals, how to brown butter (but not make it bitter). Yeah- I’m a huge fan and he truly has made me a better cook & baker

Carrots and parsnips are really good to add to the potatoes and are delicious with roasted chicken. Brushing chopped garlic in a jar over the vegetables really makes them pop as well.....

I just found this the other day, roasted it on my Weber Q doing all the same steps except I used basil, thyme, rosemary and sage as my herbs. It came out really incredible... probably the best roasted chicken I've ever had honestly. Had a real Italian kind of flavour to it.

I JUST did this recipe and ohmygod, it was amazing! 😍 I'm not really much of a cook so doing something like this really intimidated me, but I was extremely surprised that it was fairly easy AND OH SO DELICIOUS! I cooked my chicken for about 80 minutes and added the potatoes, carrots and broccoli at the 60 minute mark. They turned soooo well that way. My inions got a little burnt afterwards though but it was nothing major. I highly recommend this recipe, thank you so much for sharing ❤️

One really unique Thanksgiving memory I have is my mom, my sister and I each having 1/3 of the roasted turkey liver! I love chicken livers sauted with onion, garlic, mushrooms, green peppers. Then you pour in some chicken stock and corn starch to make them saucy and add fresh tomato at the end and serve it over rice.

I often marinate my chicken with my own recepi. Find it taste delicious. Because I am alone, I would buy a big cut thigh. 1 Portion Chicken (1 person serving) Method: 1. Chicken Thigh-1 nos 2. Marinade Mix seasoning : 1. Sugar (2 Tblspn) 2. Oyster Sauce (2 Tbsp) 3. Maggi Soy Sauce (a dash) 4. Light Soy Sauce (I use kikoman-2 Tbsp) 5. Honey (optional): 1 Tbsp 6. Fried garlic oil (1 Tbsp) 7. Chopped Fried Garlic Put clean chicken thigh face down in a soup bowl and marinate at least 1-2 hours. Overnight more flavourful. However, fresh do it on the day better, no need fridge. Put remaining sauce together ovenate. I would use a stainless steel plate foiled. Once ready, ovenate 45 mins. Pair the roasted chicken with steam rice 1.5 Bowl (having an electric steamer at home is great) & Stir Fried Spinach (1. Cut clean spinach 2. Oyster sauce (sufficient) 3. Fried garlic slices (some ready made in plastic bottle) 4. Fried garlic Oil better or just boil(1.5 Tbspn) 5. Kikoman light soy sauce 6. Little starch if needed 7. Water (sufficient). This is my simple delicious meal at dinner. Sometimes I would add steam 1 egg custard or fried egg and simple soup 1. Hot kettle water with 1 teaspoon borvil in a soup bowl.

I just made this last night and it was perfect! Thank you. We've made other high temp roasted chicken recipes but I really enjoyed this one. It took 1 hr & 15 min. in our gas oven. Also, I knew the "let the bird rest" philosophy after cooking but appreciated your explanation of why. For some reason that part has always escaped me and I'm pretty sure we just dig right in. haha There were no giblets with our chicken but had there been a liver I would have tried roasting it as well...and then let my mom and husband eat it and report back on its wonderfulness.

Hi, John. U.K. here. I was a butcher for many years and I worked with a chap whose wife used to make Chicken Liver and Chicken Heart stew. The kind of thing you could put in a food-flask for lunch break. It was the most beautiful tasting stew I ever tasted. (Shame... silly bugger got divorced before I could get the recipe. Tried it myself and it was okay but, not a patch on the original). (Hey, just thinking on it... is there an idea for a video here? Just sayin').

Try this: “Cajun” rice dressing which is seasoned rice and well cooked & minced chicken livers & gizzards. Look for it in a Cajun cookbook. It’s a side dish, not a stuffing. It does not need to be “hot” from hot sauce!

@@obsidiandwarf Make it spicy or mild. It’s called dirty rice because of the ground brown bits of chicken livers etc in it. See if you can get cheaply some “Louisiana hot sauce”- it’s always red, not green. Tabasco is fine but cheap hot sauce with cheap chicken innards is “more better,” more authentic. Enjoy! Long grain or “fluffy” rice, not that sticky kind of rice.

When I was a kid, we'd always stop at a grocery store after we came down from a week camping in the mountains and grab a pound of chicken gizzards and a pound of chicken livers, as well as a loaf of bread. Being famished from not eating huge meals all week, I can still recall the way those livers just hit the spot like nothing else could. We'd tear chunks off the bread and have at it! Try mixing equal parts (softened) butter, and flour. It creates a paste. You whisk a bit at a time into simmering drippings, until you have the thickness you want. The butter covers the flour, and it cooks. Lump free. Classic french technique. Learned it from Glen and Friends Cooking.

Made this tonight. I was very surprised that there were not ANY natural juices to baste the bird with. I saved it by adding vegetable broth about 30 minutes into the cooking time. The taste was delicious but if I had not added the broth, the chicken would have been very dry and the vegetables burned.

I used a one inch flat spatula. The skin did not break. Its in the oven now. Used steel foil for the wings and legs. Hope it works.
