Cucumber salad is one of my favorite things to eat in the summer. I also make it with sour cream, onions and vinegar, seasonings. Soo good. I was born and raised in Michigan, but also lived in several other states, some northern and some southern states.......” I don’t give a rip” was said in those states too. I don’t think it has anything to do with a southern saying that I am aware of. Back to the veggies... and herbs...My dad had a huge organic garden that was located near the lake with every type of vegetable, herbs, berries and even grape arbors. Yes he made fantastic wines. My mom would make pickles out of the baby cucumbers. I remember growing up on the lake and weeding the garden while the birds dive bombed me. Once I got too hot, I would jump into the lake to cool off. Sweet memories.

I prepared this salad last week to take to a gathering. It worked out very well, and was exceedingly popular! I had time to let the ducks sweat longer, and did get more liquid removed. I finally finished the small amount of leftovers a few days later, and was really impressed with the amount of crunch that the salad still had. One more note: I increased the recipe by half, using 3 cucs etc, but needn’t have bothered increasing the amount of dressing. Definitely a make-again recipe! Thank you, John!

Ahhh a classic summer salad. I once used a raspberry vinegar with out the herbs and it was fantastic. Also if you don't want the onion to be bitter soak the cut up onion in some cold water for a couple of minutes and then drain off the water. I do this for any salad I want raw onion in like chicken salad or tuna salad. I also like the English cucumbers like you, their peels are not bitter like those waxed ones and they have much less seeds in the middle. I swear I see this kind of cucumber salad at every Southern summer BBQ/Cookout! Love it!

John--My children are now middle-aged. I STILL don't have enough time for friends and other activities, for now THEY have children and they ask for advice with parenting as well as for themselves. You NEVER stop being a parent. By the way...this recipe is very close to the recipe that was handed down through the Lithuanian side of my family.

My dad used to do this salad (minus the mint!): he would salt the sliced cucumbers and place them over a clean kitchen towel, then hang it like a bag from the kitchen faucet for half an hour or so. He would then squeeze the bag over the sink to get rid of the excess water and bitterness. It brings me fond memories!

Thanks to your vid, I will now add mint whenever I make my new pickle! I pre-salt my thinly sliced cukes, put them in a strainer over a bowl, place a weighted saucer on top, and let them chill in my fridge for a half hour or more. I squeeze any remaining water out, and continue on with the recipe. The cukes turn out extra crispy, even after days in that sweet and sour brine! [Rushing to garden to pick some mint!]

I made this and it was so much better than what I’ve made with cucumbers and onions before. Oh my, I love the dressing and soaking the red onions this way was extraordinary! We’ve had red onions chopped on ploughman’s platters before and I’ve searched and searched for them (how they tasted) and never could find them to purchase, but THIS was how they were prepared. Who knew? Thank you, this is a winner for several reasons.

I know this video is YEARS old, but for Father’s Day my Dad made it easy & said, just order pizza…but, well…We need something to go with & I’m pretty sure this & you and your Mom making stuffed mushrooms are 2 of my favorite “go to” dishes. I live in a VERY small town in TX…have most of my life, and though “that housewife” was one of my favorites, I have never heard anyone but her say that. I have a picky husband so I have to watch the “exotic“ ingredients . But I think I’ll try this and add just a trifle bit of the mint each time I make it until he becomes accustomed to it. My grandmother used to make something similar but added chunked tomatoes (the kind that came from the garden - a REAL tomato) and a light bit of mayo. Then she put in the "icebox" to get really cold - perfect on a hot summer's day!

I am in Michigan "I don't give a rip" is common and I am 70 yrs old. Midwest uses it also. Never heard of it as regional ....like the word "pop, cola, soda" ... for fizzy drinks.

These were delicious. I didn't have any fresh dill so I poured in some dill juice from a jar a pickles. Also, I don't really care for the seeds so I cut the cucumbers in half, and then spooned out all the seeds before slicing.
