I am now 66 and taught myself to can about 3 years ago. This year I have canned fresh sweet corn and yesterday I made 8 pint jars of beef stew for winter meals. Hoping to can some fresh tomatoes from the garden very soon. I also freeze dry a lot of ingredients to have on hand for meal prep. I do not grow a lot in my own tiny garden but I try to ounce from local farmers for the items we can & preserve.

I had never worn gloves when working with jalapeños until a couple of summers ago I learned the hard way! I must have had some super hot peppers. My fingertips started burning so I quickly washed my hands well with Dawn dish soap. That made it worse! The pepper oil was then all over both hands. I got online and read all the tips. As the day progressed, my hands were burning so bad I thought I would have to go to the after hours clinic! I did everything from Dawn, to white vinegar, honey.......... the last suggestion I read was to rub a thin layer of prepared yellow mustard on my hands, let it dry for 10 minutes, rinse and repeat. As soon as I washed the second time, my hands were 100% pain free! I will always wear gloves but it's good to know that something as simple as mustard worked like a miracle.

At the end of the season I let my jalapeños stay on the vine and all turn red. Then, ferment and make siracha sauce! It’s the bomb!

I am in Missouri also and with all of the rain, we were so, so late getting our garden in. My canning project will be stocking up on the green beans when they finally come on. But I think the later aka “fall green beans” have a sweeter taste so we are really looking forward to those.

Just a quick tip for you and I really don’t even remember where I heard this but it does work, if you have an onion smell or like with you the jalapeño smell, wash your hands good with toothpaste and it will take care of the smell. Hope this little tip will help! 😊 God bless

I chopped up some jalapeños and later that night, I took my hard gas permeable contacts out. It was definitely not a great choice. Had they been soft contacts, I probably would have had to toss them. Lol 😂

I am so excited for my garden this year. I have the best garden I’ve ever had this year. I’ve really been able to focus on building my soil so everything is just exploding. I am so excited to be able to can my own tomatoes this year. I noticed you were sterilizing your lids. I don’t know if you are aware but the guidelines changed. You don’t need to sterilize your lids if you’re processing things for 10 minutes or longer. Pre sterilization in hot water apparently compromises the seal. They also say you don’t need to sterilize the jars too, but I still do.

lol! If you wear contact lenses…you MUST wear gloves! 😱😱😱🥵 Because when you take your lenses out, and put them back in in the morning…OMG i almost died one year I swear. I was literally screaming. My husband didn’t know what the heck was wrong. 😆 It was horrid! 🤣😂🤣😂 Never again. In the off season when I have to buy them at the market, I have a produce bag on my hand to pick them out with and another to put them in. I don’t care if people look at me oddly. That experience was insane. 😵💫😵💫😂

I canned salsa last weekend and wore gloves until the last batch. I was in a hurry to finish because it was getting late in the evening, and I burned my hands so badly! The gloves are essential for me when dealing with jalapenos or any other hot pepper! 😅

im wanting to can my own spaghetti/marinara sauce. Seeing you do it in your roaster seems so much easier to me. Do you leave your skins on your tomatoes since you are using your immersion blender? I just made pizza sauce for the first time so I'm excited to try this recipe.

I’ve personally never slipped the skins off my tomatoes 😬 Some people may frown upon that but I think it’s easier and more nutritious that way 🤷♀️ Just make sure to clean them really well of course. Do you have problems with fruit flies during harvest time?? We are having a time with them and it's so irritating. Any advice?

They haven’t been too bad this year so far but they can get so pesky! In the past I’ve kept some peels or even banana peels and put them in a bowl or cup, cover in plastic Wrap and use a toothpick to poke little holes in the top. Those little fruit flies will find their way in there but can’t get back out 🤷♀️ I leave it a day or two and it helps to capture them! Worth a try! Thanks for watching!
