Preserving The Radish Harvest!

Here is a short video of me preserving some radishes in my favorite method, pickling. It is so easy and you can find it in the Ball Book I mention in the video (and that I link to below on Amazon) or you can click the link to the blog post I found that has this recipe. I quadrupled the recipe in the book to make two quarts because we enjoy them so much.

I've been doing a lot of radish recipes lately and this looks like the next one i need to try. Use the daikon to make carrot daikon pickles, soooo good! It's our go to add to stir fry or serve cold. Thank you for the recipe!

Bay leaves have tannins that keep your canned veggies from getting mushy. According to Mary of Mary's Nest you can put a tea bag at the bottom of the jar is you don't like bay. She says the tea bag will not affect the taste. I just use a bay leaf at the bottom of the jar and I don't notice any added flavor but some people have more sensitivity and can taste it. Thank you for sharing this recipe, I'll be harvesting my radishes in about a week and looking forward to trying this.
