Korean people use silver chopsticks and bowls because the kings from the Joseon era were worried about being poisoned, and silver would indicate if the dish was poisoned by tarnishing directly when entering in contact with it !

On the topic of the accent, I think it’s important to realize that it’s not just a thing made up to make fun of Asian people. It’s a real accent people really speak natively, as Nigel does and did only speak before he went to America and London. Disguised Toast said the same thing when he did the accent on a dare or whatever - that’s how they actually spoke. It’s not just a meme, it’s real. The accent is the biggest thing that differentiates you from those you live around (this accent being spoken in America and the UK of course), and so it’s totally natural that if a bully wanted to use anything against such a person their accent would be the lowest-hanging fruit. But by playing a mostly lovable character who speaks this accent, and teaches you about Chinese/Malaysian culture, Uncle Roger is doing leaps and bounds to spread the culture by getting those unaware used to this kind of accent and used to hearing him for what he says rather than the accent. And yet the accent can still be a point to bond over anyway, as Uncle Roger has really spread these Haiyaa and Fuiyoh words, getting people used to them as something to understand rather than see as totally foreign. This is why I see the accent as a good thing, rather than as something to be afraid of.

being mad at making fun of accents is also stupid as long as its in jest and not in hate ive gone to several places where people try to do the speak like an english speaker thing making fun of me and its funny people not speaking their native language is often just funny and people need to stop being snowflakes. again assuming people arent doing it to belittle you like yeah hahaha they can speak multiple languages how stupid they must be....

F**k, dude. Your voice cracking in the end legit made me cry. I have talked someone off a roof she was willing to jump from and I have been helping troubled young people with a lot of voluntary social work and sports, but I damn well know how it feels like when the moment comes and it just wasn't enough. I love your show for what it is, but have a sincere THANK YOU for bringing up this topic at the end. I know how much strength it requires.

It must be nice to see people from a similar background and culture becoming successful and well loved. Never downplay your own accomplishments though Brian, you have achieved a lot yourself and you should be very proud of yourself. I know this was a few months ago but I'm sorry to hear about your friend. Their life was taken by this horrible destructive condition which is something that nobody should have to go through. People that have never suffered with depression can never really understand just what it does to you, mentally and physically and I am so sorry that he felt that the only way to deal with that pain was to make everything go away :(

We hosted Japanese teens back in the 90's. My one son, we treated them like our sons. Introduced me to the curry made with the block that looks like chocolate. The ones I still buy use the whole block. I think it is called Golden Curry? He also taught me how to make rice with a rice cooker.

In Japan it’s very common to slurp your noodles. It actually means that you like the dish and is a compliment for the chef.

All japanese i talked to said that's a myth. You slurp cause you're supposed to eat your Noodle as soon as you get them to preserve the flavour and the broth is freaking hot. That's about it.

I live in Japan and when my coworkers and I go out to lunch and grab ramen 1) we have work to get done 2) the places are often small and are looking for high turnover for lunch 3) that shit is hot so you're slurping trying to be quick and not burn yourself

Nigel Ng is a brutally honest horndog that thinks there are almost no limit to humor because it can shine a light on almost anything, either to kill it or make it grow stronger. He had a podcast with a Swedish Asian girl and just seeing behind the scenes was great, everything from asian parent stories to racial violence stories etc.

Aw dude sorry to hear about your lose. Doesn’t matter how long you’ve known them if you connect, you connect. I typically laugh at how terrible Asian jokes are now, as a young teen I dealt with it badly…. Also living with an undiagnosed mental illness then made things extremely difficult. But with age comes better ways to stay calm and not blow your top. The best most original ‘Asian insult’ i’ve had thrown at me was going called a Rice Picker (😂😂 laugh then, still laugh now.) Well you know the type of crap you get living as an Asian kid.

The "curry bullion cubes" Brian mentions are readily available in the Asian section of most markets. The brand that is most popular in Japan is, interestingly, called Vermont Curry. It's actually a Japanese brand, despite the name. My understanding is that the name comes from an association in Japan between Vermont and apples. Historically, Japanese curries are relatively sweet, and the sweetness often came from pureed apple. It's good stuff, but don't be fooled. Even the "spicy" version has no heat worth mentioning. If you're looking for something spicy, you'll need to look somewhere else.

Hey chef, I know that is impossible to not feel guilty or responsible in a way when something tragic like that happens, but I truly hope that you'll be able to move forward in your life and be able to someday only remember the good moments and good things that you did to each other as friends. Depression is really something that can make us feel like even with all the support in the world, things are still just not worth it (I say this by personal experience), but I can assure you that all your moments with your friend weren't in vain. Wish you all of the best stuff man, keep up with this incredible channel and your incredible restaurants. Be safe

I always enjoy your reactions to Uncle Roger’s reaction videos. I’m very excited to hear that you and Nigel Ng have connected, and I’m looking forward to a collaboration video with you two. Over several decades, I’ve worked with many coworkers who have immigrated to this country, and for whom English is a second language. I have the deepest love and respect for these people as my job is a difficult one with a good command of the English language. I can’t imagine how difficult it would be for someone to be as successful as these folks are in a language that is very different from the one they are more comfortable speaking in. I couldn’t even think of how I would manage my job if I had to learn and do it in a nonnative (for me) language. These folks are far better at it than I ever could be. Loads of respect! I commend them all in their efforts and successes. I’ve learned so much about other cultures from these coworkers, and we have the most wonderful potlucks. It’s been a truly enriching experience. I agreed with you about the ugly, racist stereotypes used to put people down. I hate it. I see no humor in it. It saddens me greatly that people are still using them in that way, and that you and others have been victimized by it. I firmly believe in treating all people with respect and empathy, as I would wish to be treated myself. That being said, the way Nigel Ng uses the Uncle Roger character is in a more positive way. That he is giving good information, and calling out bad Asian cookery. I don’t see him as putting down his culture. I see Uncle Roger as more of a cultural champion, rather than a comedic punching bag. You don’t make fun of Uncle Roger, Uncle Roger makes fun of you (if you F up). Uncle Roger comes across as a knowledgeable, common sense personality, who doesn’t take crap from anyone. For me, it’s like having a conversation with one of my immigrant coworkers. I makes me feel a little warm and nostalgic as some of these people as gone, and I miss them very much.

So sorry about the loss of your friend Trevor. So many survivors believe they should have seen something or done more. Please have compassion for yourself. Some persons who attempt/complete suicide mask their pain really well when they are with others and suffer alone behind closed doors. Take comfort that Trevor enjoyed time with you in the kitchen. Thanks for another reaction to Uncle Roger video and for raising awareness about suicide. Also looking forward to that egg fried rice video.

17:56 That is a traditional bowl mostly used in Korea. Made from bronze, those were the dishes used only by high class people until 19th century in Korea. Especially the bowl can detect poison by its changing color, Kings and royalties only used them. Although they have amazing antibacterial properties, they also go to rust very easily and are very hard to properly care. So nowadays most of them are made from stainless steel and little bit of titanium for color, not from bronze.

FWIW the poison part is only for silver, which doesn't *rust*, it *tarnishes* forming a black sulfide when it reacts with sulfur (it also oxidizes over very long periods of time). This tarnish is what makes silver cutlery and dishware labor-intensive, but also what gives its is "poison detection" ability, specifically against arsenic: arsenic sources are often rich in sulfur (e.g. realgar As4S4, arsenopyrite is FeAsS, ...), historical arsenic would thus often be contaminated with sulfur, and thus reactive with silver. So silver doesn't actually detect any poison, it detects a very common (historical) contaminant of arsenic.

Japanese / Korean curry is introduced to them by the British Navy for Japanese Navy cafeteria, and the "bullion boxes" are called "roux". It is solidified paste using shortened emulsion of butter and flour designed to make it easier for storage and long sea voyage. In Japan, curry houses are found on "Yoshoku" or "western food" section of food directory because of its history. Unlike curries in Southern China or Southeast Asia, which is closer to its original dish from India, that uses clarified butter or coconut milk. The accent that Nigel Ng uses for his "Uncle Roger" persona is a simple Malaysian / Singaporean uncle (Ah-beng) or Indonesian "Chinese downtown boy" (Cinko - Cina Kota) accent. Basically English mangled by mostly Hokkien / Cantonese accent and grammar, something you don't normally hear out of anglosphere immigrants from East Asia (e.g. Shanghainese / Zhejiang English accent, Beijing English accent, Konglish, or Japanese Engrish). It is uniquely Southeast Asian.

About the slurping: I'm half Japanese with a German Mother - growing up in Germany, I was taught German table manners, and slurping is indeed quite frowned upon. When I was about 5-ish, an elderly Japanese Friend came visiting and was invited to dinner at our House. And seeing the the gentleman slurp his Noodles, I complained that he was allowed to while I wasn't (guess I hadn't had ramen at the time yet, and the meal must have been spaghetti). My dad broke out in laughter, and the gentleman had him explain what I had said - to which the poor guy literally turned red as a tomato 😀

slurping is actually considered polite and a great compliment to the chef and the food they have provided, in japan. When I was there that was something I was very conscious to do despite not really doing it at home because I was raised to chew with my mouth closed and eat quietly

Great video and heartfelt message at the end. I try to always be mindful of things like that. I wanted to mention I googled Trevor, and it looks like there was no cause of death released. Just letting you know in case you didn't. I would think you would, but I wanted to at least take the opportunity to make sure. Keep up the good work. You, Trevor, and his people will be on my mind.

That ending... I feel you man. I know from someone who has attempted suicide multiple times and it's really hard specially to the ones who are really close to that person. You see him doing ok and two days later your friend that's really close to him explains you that he has attempted suicide. It's devastating and sometimes there's little you can do even if you try to be prepared all time. When something like this happens, even if it's a cliche, I often find that it's better to remember the good moments with a smile. I think people wanna be remembered with a smile, for the good they did and wanna be a positive memory, not ones that brings sorrow. Besides people won't die as long as they are remembered.

Having lost my Older brother, uncle and my father all to suicide, seeing your message at the end really got to me. I hope everyone has someone they can reach out to when they feel they're at their lowest.

Sorry to hear about your friend 1st of all. 2nd yeah, this collab was super fun. If you want something more with a positive attitude, lately Joshua Wisseman had a cook off against Uncle Roger. It was with good humor and good food. I recommend you to check it out. And about what you said regarding Mozzarella, I am not a Chef yet I have decent cooking hands. And if I would have made for you a Pizza with fresh Mozzarella (I did it and it tasted great I swear) you would eat it with appetite I am sure. My next challenge for myself, is to make Thai Green/Red Curry from scratch. I did my research, and what disappoints me is that I can only find dry Galangal or pre made powder Galangal in my country. The rest I will find.

Slurping isn't just common in Korea, it's expected and preferred. When I was in Korea my friends and I had coffee at a small coffee shop every friday, the owner invited us to eat with his family one night. I've never seen so much slurping in my life 😂. He actually told us not to be afraid to slurp the noodles because it lets the cook know the food is good.

RIP Trevor. Him and TBDM is who catipulted me into the realm of extreme metal. I've seen them live like 5 or 6 times. Trevor was always the coolest guy ever with his fans. He'd come out and chill with all of us before and after their shows and treat us all like he knew us for years. His passing was shocking on another level. I just discovered your channel a few weeks ago and have been binging videos. I didn't see that podcast or the end of this video coming. You're absolutely right... sometimes people just need somebody to listen. I think the plandemic and being isolated and away from touring for so long is what took Trevor into a dark enough place to go through with it. I believe his mom had recently passed away as well, and they were really close. I've been alive to see a lot of musicians pass, but Trevor's death just hit different. I'm sorry for your loss.

if I remember correctly in Korea they use metal chopstick because of an old story about a king that was thinking someone wanted to poisoned him so he used metal chopstick because the metal will react and becom darker if poison was on the food
