@@angusmclean8991 there's a reason he says it's advanced, and as long as you're keeping the blade against your fingers and have a sharp knife you're not losing control.the reason you don't put your finger on the spine isn't because of control, it's because if you do it all the time it will cause tendinitis in your hand.

@Dosicmyth It's not advanced. It's amateur and encourages bad cutting habits. This guy can cut well and is clearly practiced, but he's nurtured a bad habit. I've seen it happen in my 10+ years in kitchen work. Both to myself and others who were learning. When I first started out I held their knife like he does. I was told time and time again by the chef's around me and unfortunately started learning the hard way. I don't know about tendinitis, but that's just further reasoning as to why it's bad practice to hold a knife that way.

Get out of here, with that pinch grip snobbery. There are vids of Gordon Ramsay not pinch gripping and even a legend like Jacques Pepin have videos of him not pinch gripping his knife, also, let's add another legend to that.....Julia Child also does not pinch grip, shocker right? Ya'll gonna sit there and say that's an improper grip? Grip the knife how it feel comfortable and stable to you. The rule of thumb has always been to get a good firm grip on the knife and let it do that work for you.

Chef here! Never due third technique, that’s how you fuck up the tip of your knife. Any actual chef will tell you that, it also messes up your cutting board.

It’s sad to watch all my friends use a knife. My dad taught me really young and said something along the lines of you’re gonna meet someone like your mom and her dad is gonna see you not know how to use a knife and hate you. One of the best life lesson I ever learned, I’m making tacos tonight for everyone:

I think you forgot the most important part of the lesson. When learning new knife skills it is important to always start slow and gain speed naturally as your comfort level increases.

Please remember: being good at using a knife doesn't mean being fast. Only go as fast as your skill permits. I personally go slow and have very good precision

Honing knife cutting skill is quite satisfying! Rock and chop is definitely my go to, love it, especially with good rhythm timing in a busy kitchen and they make almost no sounds.

Having declared my dissatisfaction with this sharpener last night kzbin.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ I thought about the problem some more. It occurred to me that I might be undoing each attempt at achieving a sharp edge by the repeated attempts. So, I tried to clean up the unsatisfactory result by honing with only positions 3 and 4.Miracle!! A really nicely sharpened chef's knife, more than enough to handle my needs. Admittedly, it did not reach professionally sharpened razor-fineness, but it is now significantly sharper than it was. A bout of breaking down carrots convinced me. So, major apologies to the manufacturer, Amazon, and all happy and potential owners! Follow the directions: don't buy it if you have ceramic blades; and don't overwork your knife blade.

With a little bit of practice it's not hard to chop at all, the problem most people probably face is how sharp the knife is, you can see that he has a pretty good knife

If I tried the last one my mom would freak out and never let me use a knife “for being too careless” 😂 but the first one is what I use. Interested that see if I can do the second and last one without losing a digit lol

Funny thing is the 3rd one is actually least dangerous as the first 2 are both chopping motions the 3rd is a cutting one and I'm more scared to chop at a finger ( lose the finger ) father then slice the finger ( horrible cut, but still have a finger tip lol ) overall it's more likely to foul up but the damage isn't going to be threw the bone just maybe to the bone which chopping I'd easily go into my bone if I fouled up.

Little tip from a former prep cook, try to do both of the first ones and alternate between them otherwise you are going to overstrain some of the muscles in your wrist without giving them a break
