My mother taught me to never add salt to dried beans while cooking because it will make the skins of the beans tough. What you do is: you soak them overnight, throw away the water the beans soaked in, put them in a pan with fresh water, cook them 'till tender and then, only when you use them in a dish, do you add salt (and other spices).

I'm just doing what my mum taught me, who learned it from *her* mom, etc., but it might be that in the days of my greatgrandmother, beans were regularly sold when they were too old so nothing would soften them and the salt got the blame. Or maybe my foremothers were right and salt really does make the skins of beans harder. Hmmm.... Maybe the Brothers Green should do a 'Bean Special' video in which they go all Myth Buster and try to soak & cook beans from the same batch in four different ways & compare the results. So soaking in salt water vs soaking in fresh water and cooking with and without salt. And then of course a few recipes for beandishes (I've got a good recipe - handed down from, you guessed it, my grandmother - for a simple but tasty Dutch beansoup with cloves and bayleaves and lots of onions if you're interested)

+Smallpotato1965 It's good to throw out the water after the pot starts boiling and put them yet again in new water and then cook them as you would. I've been told that you don't get as gassy after eating them, because a bunch of the chemicals go in the water. Some ppl even do it twice. IDK if it's true, so I'll look into it, I've also been told this by my grandmother and mother.

what my mom does when she makes stock is boil the bones with some meat still on them, and then once it's ready, she pulls the cooked meat off of the bones and use them as shredded chicken for sandwiches or spring rolls or soup and stuff like that. tastes delicious, and also no chicken is wasted.

Wanna know a nice cabbage salad recipe? Cut the cabbage very thin, salt it over night, squeeze it in the morning, then add vinegar (maybe some salt depending how salty it is already) and pepper. It's my favorite salad (kupus salata in Croatian). It stays crisp and oh man is it good. Cheap and easy to make too. Last ages as well.

I usually use red wine vinegar, but you can use white or apple cider vinegar. Just probably not balsamic, too sweet. I forgot to put down olive oil, gotta have that too. I wish I could give some measurements, but it just depends on taste. Add a little at a time until it's good. It's nice to use a mix of regular and purple cabbage. I usually do them separate though because purple is usually a little more firm.

Hi ..Its me. I spent $21.00 the first week... Had a bunch of stuff in my cabinet.. and freezer ... I ended up... making a Black Bean, Chickpea, Corn and Red Onion Salad.. and that is what I have been eating every single night for almost 2 weeks now.. I am not tired of it.. So until I get sick and tired of it.. that is what I will be eating for Dinners. For breakfast.. I have been having 2 scrambled eggs with 1 slice of toast. for lunch I have 1 apple... But I had this chicken I had defrosted, and knew I needed to do something with.. So I put it in the slow cooker.... And some nights I put that into my salad.. I now know why I needed to head to the Grocery Store today.. l Milk, and eggs.. I am out of both.. I don't drive,, don't have a car.. and its to dark to walk over to Walmart.. or even to Winco.. So I will get over there tomorrow.. I will have to see what to have for breakfast tomorrow morning.. gonna be interesting.. Maybe 2 slices of toast... and a cup of nice hot tea... This challenge has really been interesting. As I have not spent the money I would have otherwise.. .. I will see how much weight I will have lost after this challenge...

What my wife and I will normally do is put some beans, a little bit of onion, garlic and bell pepper and spices in a slow cooker and let it cook on low for 16-24 hours! My favorite is Lentils like that!! And serve with rice!!

+London Gleason Most beans should be boiled for 5-10 minutes to break down a toxin. It won't kill you or anything if you don't, but it can give you pretty awful diarrhea. It became a big issue in the 70's during the slow-cooker craze.

Hey this challenge of yours is something I have been thinking about for ages. I am just about to move into a house (from being homeless) so I am too preoccupied to do it now. However, after I move, I have decided to do a blog or youtube channel etc about eating healthily on a budget. The documentary you referred to, actually changed my life. I had all these ideas floating round my head about growing my own food, foraging, herbal medicine, building an eco house, having a blog and/or youtube channel, moving abroad, building a website, buying land etc . . . but more importantly passing on knowledge to empower others. After watching the documentary, it all clicked into place and I came up with a plan that covers all of the above, and is actually financially sustainable. Whilst spending your life empowering other people is wonderful, it doesn't pay the bills!! My new plan does! So a big thankyou to the guys that made the documentary and to my brain that finally brought all my random thoughts into one, cohesive plan!

Love it very interesting. A bit ago I went through a similar experiment but because I had to, not because I wanted to. And one does get very creative! I bought potatoes, canned beans, a bag of rice, frozen fruit, some veggies, onions and a couple of other things and just experimented away.

Slaw is a fantastic veggie staple to keep in the fridge. I make dry slaw (no dressing of any kind) and keep it in the fridge and add dressing to a portion if I want to eat it raw, or fry it up with a little bacon for breakfast, or add it as stir fry veggies for any sort of stir fry, or add it to soup if I'm making that. If you keep it a dry slaw, it keeps for ages in the fridge (cover it so it doesn't dry out of course). It's a really versatile, nutritious, convenient and cheap way of making sure you have enough fresh veg in your diet.

+mark shirley With a crock pot, it only cost between 10 and 20 cents to cook for 8 hours and you can cook a lot of beans in a crock pot, so I still think the dried beans work out to be cheaper.

+jozina1 yes there is different types of crookpots. they can differ in way of cooking, matterials, and heat levels. and they can last a while too. ive had my metal/ceramic crookpot for 10 years and is still working flawlessly. its got a ceramic bowl and a metal outside body. if you are willing to pay, go for it. they are awesome

Hey, sorry, just now seeing the reply.Where do you live they are so expensive? Here in the US, electrical crockpots are very cheap, I've seen them sell for less that $10.00 USD sometimes. For $20.00 the local megamart will now sell you a 5 quart one that should be good enough for most needs. You can find them at thrift stores even cheaper. You don't need a digital fancy one. Just the basic one with an off-high-low switch should do There are non-electric 'crockpots' but basically these are nothing but earthenware crockery that would fit in an oven. They usually cost more to buy and use, since you would need to heat up an entire oven to use it. As for lasting a long time, definately. My mother gave me one as a Christmas present when I graduated college, and it is still going strong after 25+ years of use. They really should not break down, since it's only an electrical heating coil wrapped around a clay pot with a switch In my opinion, the crockpot is one of the most underrated, unique and underutilized kitchen appliances you can have. It allows you to start food before you leave work and it will be ready when you get back from work, all unattended. As mentioned, it's also really cheap to run electricity wise. You can cook many things in it besides beans. I've cooked all kinds of roasts and meats. You can do lasagna,casseroles, soups, stews, keep hot drinks warm for parties, and even cook bread and cake in them.

Yeah, but that is just groceries. Most of the money is spent on fast food and snacks such as chocolate and potato chips. And don't forget soda, alcohol, and energy drinks.

We stoners can make a meal out of anything. one day me and a friend only had random!s shit in the fridge so we created waffles but peanutbutter on them then whipcream and chocolate syrup with bananas it was the best breakfast ever lol

A suggestion for green onions and it works really well. Is don't store your green onions in a refrigerator. Store your green onions on a window ledge in some water. They last longer and they actually turn healthy from the bruised ones you get from the store. I haven't had to buy green onions for a while. Because all you do is trim the stalks and new stalks are always growing

agree with you so hard on the canned vs dried beans. i get a 2lb bag of black beans for 1.50 ish. after soaking overnight, i usually dump them in the crockpot with bay leaves, cumin, a bit of lemon or orange juice (add salt at the end of cooking). most would call them latin or cuban style beans.

Im glad I watched this learned and even experimented on my own cause I too live in nyc and albeit I am a senior in high school, recently I traveled to India to visit cousins and normally I'd spend 10-15 dollars on lunch for one day but over there you'd be set for 2 weeks. When in reality you can do the same here. Love these vids man

I used to just eat out every night cuz I thought it was cheaper, but it really isnt...My main dishes that I make are spaghetti ,fettuccine , tacos, burgers and chicken...Cajun seasoning is a must for me...One of my favorite dishes I have made so far has definitely been my buffalo bites, I got a pack of chicken breast & legs for 2$ for 5 or 6 (they are pretty good sized as well) and I got the sauce, I found this wing hot sauce for 1.75$ that's pretty good and then to dull down the spice of the hot sauce you just add melted butter and garlic powder (1$) (4 sticks of butter for 1.50$)...Cook up the chicken pieces, add the sauce, cook it into the meat for a couple minutes and tada...a really yummy dish that costs 6.50$, which goes alot longer than you think because you only need one chicken breast and leg for one meal (sometimes less if you dont have a huge appetite)....2$ for 5 good sized chicken breasts/legs that is turned into 5 separate meals....My food budget is 20$ a week and most often I have a nice ammount of food that carries over into the next week so I can splurge sometimes and buy a sweet treat or even a more expensive item, altho that may not be the case for everyone cuz I only eat once a day because I get full quite easily
