12 large slices Chicken Breast Deli Meat
1/2 cup (56g) Shredded Cheddar Cheese
Handful of Fresh Spinach (chopped)
1/2 can (7.5oz / 212g ) Black Beans
1/2 cup (120g) Salsa
Cilantro for garnish (optional)

I'm skeptical because of the lack of seasoning. They look bland. If you cooked the beans first with some sazon and adobo and sauteed onions, that would help. Or use re fried beans. And / or drown them in enchilada sauce instead of a drip of "salsa". Sneak some jalapenos in there maybe? They need something.

As a Mexican, I'm going to be skeptical about this. Boys, blended rehydrated, pasilla peppers, not salsa. The rest of it I'll excuse for dieting purposes

Nice recipe, i would change the following though: -Drain the beans and with it the additional starch first -Add the Salsa into the enchiladas and not on top -Add a little bit of Salt.

- the beans may already contain salt - any deli meat is going to already high in sodium - the salsa will have sodium - full fat cheese will have some sodium add more sodium through hot sauce if anything. i wouldn't add additional salt in my opinion.

@@SkyZer0 not enough sodium is more dangerous than a bit too much. What people lack is potassium to offset the increased sodium intake, since excess sodium would be simply peed out and water retention levels aswell as bloodpressure would remain normal and healthy. As a personal trainer i have come to find that most people , especially those who workout a lot have a sodium deficiency. I get my potassium via wild liver, others may want to simply supplement. A 3:1 ratio from salt to potassium seems perfecr in the literature. Dont deprive your body of one of the most essential electrolytes. It is vital not only for proper muscle contractions but also brain function. Be wary what General Doctors without a degree in nutritional studies suggest when it comes to your diet. They tend to lag behind by a good decade. And who can blame them, they are basically not tought any deep understanding of nutrition in their studies.

@@SkyZer0 maybe our food in the Eu is more regulated when it comes to salt, because here the amount of salt would not cut it for anyone working out regularly.
