I am from Nepal, but now I live in the USA. Back home we always make curry out of pumpkin leaves. This is the one of my favorite food. Now, I start doing vegetable garden in a community garden, I plant a lot of pumpkin and leaves taste delicious.

Yes I found out about pumpkin leaves, I wander around the garden and harvest edible greens and flowers I roll them all tightly in a pumpkin leaf and slice and chop finely with a meat cleaver and mix with fruit and shredded coconut for lunch most every day. It's a good way to get in lots of greens.

Hi from Zambia (Africa) pumpkin leaves are one of the most common vegetables around since its adapted to the hot climatic conditions..... and we also eat bean leaves 😊

Great video! I love to make the leaves just like spinache. I cut the leaves in small stripes and then saute them with garlic. It's really good!

I remember another time I think you said you make wraps from the leaves , do you blanch them first then fill with whatever? Also the skin as chips? Cut off and bake or fry? I love this information. ❤️❤️

Hi there. Yes, blanching or steaming first i all you need to do. It only takes a few minutes. I use the hotplate, drizzle some olive oil and just close the lid for a few minute - super quick and delicious. If you want them crispier, the oven would be better.

I suppose I could also eat summer squash leaves like zucchini and yellow crookneck. I never thought about eating the leaves. Thanks, I'll give this a try! :-)

The young ones would be good, although take care not to remove too many leaves from the non-running types. Pumpkin has so much leaf and shoot abundance.

Yes, but take care not to remove too many leaves from Zucchini - being a non-runner there is less to harvest, and to get the young ones you'd be removing the central leaves which give protection to the young zucchini...
