😍 I didn’t know anyone else uses the term torkari too! Warms my Bengali heart. (Others say sabzi or curry and I often get confused looks when I say torkari so I’m not tryna be facetious.) This is exactly what my family would make too, except it woulda been mustard oil and a combo of dried and fresh chilis. I really liked how you toasted the spices after grinding! We’re taught to toast first to avoid burning and make them grind easily. But your way makes more sense for a coarse grind and it’s less hassle.

The only thing I add to mine is some chopped onion..that was a beautiful pumpkin. Peanut pumpkin also has a creamy texture. All you need now is some roti..any kind😅
