Learn how to bake easy Pwdin Eva - Welsh Apple Pudding with fresh apples and easy pudding ingredients you probably already have in your pantry. The beauty with this dish is that you don't need to precook the apples and it bakes in only 40 minutes for a super easy and comforting dessert.
Adapted from Just a Pinch
Serves 6
Ingredients:
Apples
500 grams / 1 pound cooking apples, peeled, cored and finely cubed
50 grams / 1/4 cup light brown sugar
1 tablespoon lemon zest, finely chopped
2 teaspoons lemon juice
1/2 teaspoon ground cinnamon
Sponge cake
100 grams / 3.5 ounces tablespoons butter, room temperature
60 grams / 1/3 cup caster/superfine sugar
2 large eggs
1/2 teaspoon vanilla extract
120 grams / 3/4 cup plain flour
3 grams / 3/4 teaspoon baking powder
To serve
1/2 cup warm custard
Directions:
Preheat your oven to 180C/350F.
Place the apples, brown sugar, lemon juice, zest and ground cinnamon into your baking dish and stir together until well coated. Set aside.
For the sponge topping, place the butter and sugar into a bowl and combine on medium with an electric mixer until light and fluffy, approximately 2 minutes.
Add one egg and beat until well combined, repeat with the remaining egg.
Toss in the flour and baking powder and combine on the lowest setting until the batter is smooth and no dry portions remain in the base or edges of your bowl.
Spoon over your apples and smooth out evenly.
Bake for 40 minutes or until the topping is a deep golden brown.
Remove and allow to cool.
Sprinkle confectioner's/icing sugar over the top.
Serve warm with a little warm custard drizzled over.
