I'm not comfortable with recipe using lye water, 'kansui'. Checked with a friend and was told a must to add lye water. Almost given up not to make the traditional mooncake. So glad to see your recipe using baked soda bicarb that works well. Thank you. 👏

Nuts. I got to this website trying to find a baking soda alternative because I have no idea where to get lye water and also have reservations about why you want alkaline water. Wonder what would happen if you just did it without. People say don't do it but never explain why as if they've never tried themselves. If found another recipe that completely left out the baking soda in this one. So what if we left out the lye water? It's only one teaspoon here. What's the point if you have baking soda also (base + buffer).

I tried the recipe and it turned out great! 👍🏼 Though I used honey instead of inverted syrup and my egg brushing technique was bad. Would recommend
