first time watching one of her baking streams (as a cook) her pacing is emaculate/she truly knows what a beginner should do with actual clear instructions (which becomes a lot harder to the longer you cook)(I hate making caramel)

I find milk bar recipes are great once the sugar is reduced. I don’t think I’ve ever had one where the full sugar amount wasn’t too sweet, but the flavours and textures are interesting once the sweetness is in check.

If your caramel crystalizes, you don't need to start over, lower the heat to low and allow the caramel to re-melt. Have done this several times.

Tip: the only time you need an immersion blender (or regular blender or processor) making a pumpkin pie is if you make your own purée from scratch. It smooths everything out.

I made this recipe for Thanksgiving and I felt like it was kinda overkill. I'm actually of the opinion that the caramel didn't add much, although my pie filling might have been less sweet because I used only 2/3 of the white chocolate (I didn't get enough white chocolate). Agree that the crust was the best part. I made mini pies with the left over crust and filling w/o the caramel and it was better than the OG pie.

I feel like milk bar recipes in general are WAY too sweet. I've tried the milkbar birthday cake recipe as well and it was just over the top sweet even though it is the best reviewed birthday cake recipe it seems online.

if you google creme brûlée cakes, you can find an abundance of cakes with it on top/ with it inside! Highly recommend creme brûlée cookies and doughnuts if you like it!

7:20 Salt actually has very low thermal conductivity. A lot of people get confused between electrical and thermal conductivity, but they're very different.

That would be salt in its pure solid form. To significantly reduce the thermal conductivity of a solution you will need to add a LOT of salt, and ultimately all that does is sliiightly raise the boiling point of the saline solution. The addition of salt basically makes it heat up somewhat faster, but it takes a tiny bit longer for it to get to a boil. In terms of making caramel, what's more important here is the effect salt has on the caramelization process itself, where it can speed up depolymerization of the sugars, which in turn can increase the rate of caramelization. So for a bit more control/time, it is indeed safer to wait until after cooking the caramel before adding salt. You are right, however, that thermal and electrical conductivity are very different and often confused by people!

QT, YOU FINALLY GAVE ME A REASON TO PUT SALT IN MY PASTA WATER. I seriously always wondered why people did that. I love learning about stuff like this. Edit: found a TikTok by Hank Green showing it does not raise the temperature by a discernable amount. booooo. 😔 Back to normal plain water for me, with salt added AFTER the pasta is done.
