However, now that I have heart disease, i need to avoid so much fat, cream, butter, chicken fat, bacon grease, Lord I need to stop I'm drooling. stavros333 Paula and her sons worked very hard to get where they are. They weren’t born with money. I am happy for them. I love to see people prosper with hard work. Being born white doesn’t mean life is easy. Most people work their butts off to get what they have and I don’t envy them. You don’t know their struggles so don’t be envious of them. Do you have any authentic tres leche cake recipes?? We were in McAllen Texas for a wedding and the wedding cake was Tres Leches and it was so delicious! I’ve been looking and looking for one that even comes close and have not found any!

lujean01 I saw The Pioneer Woman make one on her show that looked really good. I had never heard of it before then. Ree Drummond says there is 3 kinds of milk or cream in it and that’s why it’s called tres leche cake. It looked amazing.

I’m so glad to see this lighter recipe! Today, I will probably finish off the 2nd corn casserole I’ve made in the past few days. I made it right after I saw Paula make it, cheddar cheese and all. I love Jiffy Corn Muffin mix. It reminds me of the cornbread I had in Elementary school. We had the most wonderful cafeteria food back in the 70’s and I loved the sweet yellow cornbread we always had with our pinto beans. It was so good y’all! Thanks Bobby & Paula. It was probably good because y'all had real food back then. I don't recall getting any corn bread in any of my school lunches. I was in school from the mid - late 80's to '00. All the lunches I remember were horrible. I'd rather have been in school around the time you were lol.

Clarissa Seeger I live in North Carolina and back then (1973-1980) 1st grade to 7th grade, everything was made from scratch and so delicious. We only had 2 things that I didn’t like. The hamburgers were terrible to me anyway and I didn’t like the beef & rice. Everything else was wonderful. When I got to 7th grade, we got 2 dishes to choose from. Also they offered sweet tea or lemonade instead of milk.

Clarissa Seeger we were so lucky back then to get fresh from scratch meals. The pinto beans & cornbread, homemade pizza & homemade vegetable soup & grilled cheese was my top three favorites. I just remember the cornbread being so good because it was yellow & sweet. My mama made white cornbread and it wasn’t sweet but I loved the crust it had from the cast iron skillet. It was the best. My brother & I would sneak and steal the crust as soon as she took it out of the oven.

I recommend adding a few chopped jalapeños awesome diced green chilies to the mix. I think it’ll amp up the flavor when you’re cutting out for me. Maybe a tablespoon or two of butter instead of a stick of butter. I think I do use frozen corn instead of canned corn. Any other comments anyone? I think it’s a fantastic recipe overall. Make me some light mayonnaise or some light cream cheese.

Laura Van Hoy the recipe I found on food.com for scalloped corn is just like Paula’s except you add 2 eggs and only 1/2 stick of butter. I’ve made it with 1 stick and with 1/2 stick and I prefer the 1/2 stick. It’s much less greasy. I think next time I will add the eggs and see if it’s better. It’s really good as is but you never know. I added most of the cheese to the inside of mine and I prefer that than putting all the cheese on top. I also added some jalapeños to mine. So good if you like sweet & hot together.

Crawley R the original recipe for corn casserole has no egg but Bobby’s lighter version has 1 egg in it because he leaves out the butter and adds applesauce and he uses light sour cream.

The basic recipe for the casserole is wonderful except it is outrageously high in fat and carbs. It's just a side dish! So the alternatives used here are a good idea. I used low fat sour cream and cut the butter in half with 2 eggs. Substituting Greek yogurt will give you more protein.

Nice to hear Paula! Love Bobby Deen. This was not something that was on our Supper table, so may I ask what is the consistency of the casserole? Is it firm like corn bread or loose like a casserole? I couldnt really tell when Bobby served Aunt Peggy...top seemed pretty firm, but was it loose under?

The first time I made Paula’s recipe it was closer to grits- runny underneath, but made again and cooked at 375 and it was done in about an hour

Bobby, your mom's casserole (from You Tube) does not have an egg in it. I made it and it was delicious without it. I am going to try your recipe too. Loved your mom's. I used creama for the sour cream in your mom's recipe and it was the bomb. Thanks for all your videos, watch them every day. You and your mom are my favorites on You Tube.
