I tell ya Paula. I've been a single dad of four for 18 years, I found myself with two young ones and new born twins. I didn't know how to cook. You helped me to learn good recipes my kids would eat and they could get In there and help. This Corona virus is terrible but i tell ya, me being home with my kids all day every day is a blessing. I've worked so hard i feel this is the first time I've been able to just be home and cook and take care of my kids. Today was split pea with left over Easter ham and we are making this to go with it. Thank you for everything, especially your great attitude that somehow puts me at ease. God Bless.

That casserole is infinitely variable. If you want a full meal, add ham chunks. If you want a "Mexican" dish, add a can of green chilis and use Pepper Jack cheese. Want to make a spring version-add green onions and green peas. It just makes so many meals special.

Paula, thank you. This was my Mom's Thanksgiving dish. She'd bring it to dinner and stand proudly by while people were wowed. She passed in March after a long illness. Jiffy corn muffin mix is the best!!! It’s made in Chelsea, MI where I was born😀 The original Jiffy mix was invented 91 years ago when Mable Holmes wanted a biscuit mix that was “so easy a man could do it” 🤣 She invented it for a friend of her sons who was being raised by a single father and the boys lunch had a buisuit so hard she referred to it as a “white hockey puck”. The idea was to invent an inexpensive mix so that even a single father could make a great biscuit.

Paula my beloved mother and I use to watch your cooking shows and I just want to thank you. You brought my mother great joy before she died . She kept many handwritten recipes from your episodes along with our family tradition recipes and as I look through them I always think of the joy they brought her. Thank you for these videos in this strange time we find ourselves in. It’s important to be able to laugh right now and to continue some sort of normalcy in this crazy world we are now in. I have missed you on the cooking channels and wish they would bring you back. I thank you for your sense of humor and being from the south I appreciate your southern hospitality. Wow! This recipe really brought back great memories of my early days in the kitchen! I was in college. The year was 2003. And every day after class I’d get home to catch Paulas cooking show. And this was the first recipe I ever tried. I didn’t really do grocery shopping, didn’t cook much, but I surely enjoy watching you cook! I made this and was so proud! It was loved by all at dinner! The other recipe I made next was your Georgia Cracker Salad! That salad bagged me a wonderful man! Married 13 years now! He always talks about the cracker salad that sealed our reltionship😂

4 years ago i asked my new son in law if he had any childhood dishes he would like me to make for Thanksgiving. He asked for corn casserole. I googled the recipe and went with the Paula Deen version. Well...that recipe has now zoomed to the top of our family favorites and landed right under my dressing! I have to make two recipes, it goes so fast. I had always wondered why Jiffy cornbread had such big displays during the holidays! Now i know its because of your corn casserole.

oh man my mama made the best dressing growing up. She made the real deal too using the turkey drippings in the dressing. She chopped up the onions and celery and boiled the eggs to go in it too. The only thing she didnt make herself was the seasoned bread crumbs. She would always make up several pans of it then freeze them. We'd enjoy them throughout the year. They were never the same after they were frozen though. I mean they tasted good but not as good as when they were freshly made.

@@lisasmith9311 1 can whole kernel corn (drained), 1 can cream-style corn (not drained), 1 box of Jiffy corn muffin mix (8 ounces), 1 cup sour cream, and 1 stick of butter (melted). Once it's baked, top with 1 and a half to two cups of shredded cheddar cheese. Put it back in the oven long enough to melt the cheese.

When I had a houseful to cook for,I made this often. Our family loves cornbread. Once in awhile I would change it up for southwest themed dinner. I would use mexican corn (cans of corn with onion green and red bell peppers). If I didn't have that I could chop up the veggies fresh and cook and cool them before adding to main dough. I have added jalapenos or green chilis. No matter how its made I love it!

@@crawleyr4919 you may have missed a cup of flour, or Jiffy Mix, or added a bit too much oil and cheese; it should have the consistency of ultra moist cornbread with little embedded chunks of delicious corn kernels, and the cheddar cheese melted and blended to lift the savory flavor of corn. Some clever folks substitute greens, green peas, or other veggies, but corn is the best and sweetest.

This is exactly the same corn pudding recipe my family has made for years... its an absolute must at all family dinners. The only thing we dont use is cheese. As much as i love cheese i dont think i want it on this dish.. but thats the beauty of cooking.. you can do what you want!

I put 2 eggs in mine. To make it a corn pudding, you add 1/2 cup of sugar and a teaspoon of vanilla. Don't use the cheese, of course. Makes a yummy dessert.

Hi Paula, I am really enjoying this series. We have had a crazy year, our home was destroyed in a tornado that hit us in February of 2020 (we were IN the house), and we have been living in an emergency rental home on a 20 acre farm since being displaced. Now that I'm a farm woman (born and raised in NYC...lol) I thought I should learn some good old southern cooking. Following the tornado this COVID situation occurred, and I saw your Quarantine Cooking series. We are in Spartanburg SC, but we do have a son that lives not to far from your restaurant in Savannah. Have never been to your restaurant, but next time we visit our son, we will have to check it out. I made your chicken and dumplings, and they were a BIG hit, as was your peach cobbler. YUM! I have a granddaughter now is 14. I have bought several of your cookbooks over the years because of her. she watched you on tv and she fell in LOVE with Paula Dean. that was all she talked about. that was maybe 5 or 6 years ago now. To this day she is still in love with you and your cooking. she came over weeks back probably two months now. She said Nana guess who I found on KZbin I said let me guess. She said, Paula Dean. she was so excited she said we have to subscribe to her page. I said Ok She loves to cook and she is always making your recipes. I have always loved to cook and have had a passion for many years. I have had surgery on my hand a few months ago and have not really been able to type much until now I want to thank you for what you do and the great impression you have put in my granddaughter's life. Not too many good people have videos on here for her age. Nana Loves your cooking too

I have a similar recipe that I received from an elderly farmer’s wife when I lived in Iowa. She called it Corn Pudding. The biggest difference is that it calls for milk and sugar, 2 eggs and it does not call for cheese. My kids have grown up with it and we serve it for most holiday meals. It is a great recipe! I am anxious to try it your way - it looks delicious too! Thank you for trying to keep us all occupied during this difficult time. I pray that you and your family stay safe and well!

I made that recipe for my family and my husband did not care for the sweetness of it. So I changed it up. And y'all have got to try this. It is absolutely delicious. I followed the recipe minus the sour cream (I simply forgot to add it). And then added one package of Martha White Mexican Cornbread mix in with the Jiffy Cornbread mix plus one extra egg and 1and 1/3 stick of butter. I also added a good amount of course chopped Mezetta Tamed Jalapenos. That gave it a different flavor and it turned out wonderful! I absolutely love both recipes. The first one was definitely like a desert. And the changes I made in the second one made it more like a dense rich cornbread. I'll have to remember to add the sour cream to my version the next time I make it. I'm definitely going to use both recipes as a great side dish to any meal. Thank you Paula for bringing this to us. Have always made it savory, not sweet. In addition to the corn put in the casserole, I also line the bottom with cream style corn before adding my casserole. Been in the family over a hundred years and my granny would always shutter when someone made it sweet. The savory is the best. The sweet is just a dessert. The savory is a bonafide casserole.

Been keepin busy with learning to can, and teaching myself how to sew face masks for people. I donate them to a group where i live, and they disperse them to those who want/need them... my family came to Oregon from Arkansas in 1949. Although both my grandmother and mother are both gone, i still make the southern dishes they made. And i LOVE to listen to you talk while you cook...i miss their accents SO MUCH!!! My mother told me once when i came home after a month if visiting family, that my accent was so thick you couldn't have cut thru it with a hot knife! Lol I LOVED HEARING THAT!!! Thank you for your southern cooking, and your comforting, sweet southern accent...
