Not only do I watch but I love cooking them! I have noticed more and more how good you are at eyeing the correct amounts of ingredients and how particular you are with it being right. For instance, when you kept hunting for the crab shells and how you noticed the core pieces of the cabbage in your slaw...just a slight glance and you would spot it! I get the impression that had you had more time, you would have sifted through that cabbage until you knew you had gotten them all out...you are a perfectionist and that is a compliment! It makes you a fantastic cook!

So _finely_ cut cabbage (mixed with a cut that is a little coarser), a little red cabbage is in the bought package (for color), and not too many carrots. half a cup of mayo, may seem little, but as it sets (and the cabbage shrinks in volume and oozes out some liquid) there will be more salad sauce. Plus some secret salt ;) Finely chopped bell peppers (some people cannot eat them, same as with cucumbers, so I would divide into 2 batches), scallions (green onions), some spices. As always with cabbage salads (all of them) they get much better if you let the cabbage stand for some time. it gets softer and the flavors come out and blend.
@xyzsame4081
@xyzsame4081 4 жыл бұрын
Let me introduce you to Austrian style cabbage salad, (works very well with fried sausages, potatoe stir fry, and is the go to side dish with a traditional pork roast): Cabbage (green not the purple one - for that there is another cooked preparation, it tastes differently, sweeter). Plus: Maybe a little sugar or sweetener (I don't use either), chopped caraway seeds (essential ingredient, very good match, so dont be shy about using it, can be an even spoon for one bowl like Paula had, or even two. If you chop it the taste will come out more, if not, use a little more of the whole seeds. They also help with digestion). A few spoons of good vinegar (apple for instance), salt and pepper. Not much fluid necessary, keep it very "compact". Salt and pepper if you want The traditional method would be massaging the cut cabbage for some time with only (but plenty of) salt and then pressing it out after 30 - 60 minutes (and discarding all the good fluid with the minerals and vitamins and the excess salt). Then making the salad (and adding water to the vinaigrette). That is not necessary: Updated method: Shredder cabbage in the kitchen machine (stripes are better), or cut manually, fine stripes are better, but you can be sloppy about it (especicially if you have more than 60 minutes to marinate it), you can do as coarse as Paula showed with the 2nd package of bought cabbage. The vinegar and salt will extract some of the juices of the cabbage and there will be enough vinaigrette, but it does not swim. If will get softer in one hour (without massaging and salting exercise, the undiluted if sparsely used vinagar is intense enough for that), and you can of course let it stand over night. On the counter if it is not too hot and you observe hygiene rules - or in the fridge. Letting it marinate long makes it extra soft and even better. Since the vinaigrette is not diluted and you eat it all, you get all the minerals and vitamins. After cut cabbage, (sugar / sweetener, only a little bit, it should not taste sweet), vinegar, salt, and caraway seeds are MIXED, add a neutral oil (like on a green salad). I guess oils with a characteristic taste (like virgin olive oil, ....might work - but then it is something differernt than the traditional side dish. Of course you could take liberties and add fried bacon bits and use the lard and drippings from frying bacon instead of oil. A very hearty variety, but a good fit. Simple (neutral) oil and no bacon is the traditional recipe. With the oil (or fat) added, the salad already decreases in volume. The vinaigrette could reach all the cabbage and only then the oil creeps into every nook. Oil would encapsulate the cabbage somewhat, when you do not have a lot of time to let it marinate, it is better to add oil only after you have already mixed all ingredients that give it flavor. So that the vinegar and salt can cling directly (in traces but the vinagrette is intense) to the cabbage and soften it. Of course that raw cabbage salad could also be made with red cabbage, but then I would add other spices.

Ok Paula, at the end when you said you know how I really like to eat this....I said to myself, I wonder if she’ll say “on a hot dog”!!!! Lol that is my all time favorite too!! Thanks for all the time you are taking on these videos! It’s great getting to know you and your family in a “real life” setting! I’m addicted, staying up til midnight most nights watching and pondering which recipe to make next! I’ve tried the Vidalia onion casserole and the Tomato and macaroni salad so far! Yum! Although not the first Deen recipe as I love love love Jamie and Bobby’s Ya’ll Come Eat book and basically have the Cornbread Casserole recipe fixed in my memory!! #imafoodnerd I may drop you a letter soon! Take care!!!❤️🇺🇸Julie

That sounds good! I always just use miracle whip or mayo,sugar to taste,apple cider or white vinegar,salt & pepper,mix & add to cabbage. Sometimes add some chopped onion. That's same dressing i use for salads too. My elderly aunt had good recipe few years ago,think it was called 24hr slaw but was so good!! Cut up cabbage(small head or half large head)small white onion,,stir half cup sugar & mix,refrigerate covered for half hr to hour,mix dressing in small pan half cup vinegar,salt & pepper,half cup sugar(or fourth cup),spoon of dry or prepared mustard,tbsp celery seed,heat to boil then remove from heat,stir over cabbage& mix in well. Refrigerate few hours before serving is best but i couldn't wait very long so used sooner. Lasts several days covered in refrigerator,so good!! I was giving recipe from memory so hope its right! You could vary ingredients to your taste. She had a great fruit salad i had never seen recipe for before or since,same with slaw!

I would love to see Paula demonstrate a relish recipe. The stuff at the store is just too sweet. A good pickle relish recipe would be awesome, and I'm sure Paula has a good one!

In Virginia, we put a hotdog on a bun, mustard, chilli (NO BEANS), chopped onions, slaw. Sometimes pickle relish also before the chilli goes on.

Hi Paula, from South Africa. I love you and your videos. We also add chopped nuts and a handful of raisins to our coleslaw, it gives a bit more crunch and tiny bits of sweetness here and there.
