One of my favourite cake recipes. I've been making this cake for probably the last 40 years - it's perfect, quick to make, not overly sweet, delicious with a hot cup of coffee or tea, and a wonderful hostess gift too. Make it because you won't be disappointed.

I made 1/2 recipe in a small square pan for a couple of tea time guests. It was a huge success. It's a perfect cake for tea, though a bit sweet. I will reduce sugar a bit next time.

Hi, when I was a teenager, my friend's mom taught me to use always one cup of sugar less than the number of cups of flour. This proportion has been working well for me since then. In this recipe, he says 2 of flour and 2 of sugar. This is indeed a little too much. I hope it helps.

This was a recipe my grandma used all the time in the spring for strawberry shortcake! It is so good when the sweet juice soaks into it when you layer it up with strawberries and whipped cream.
@htershane3 ай бұрын
I’ve been making this cake for years and just found out this is what it is called😂 I just make it as a go-to for myself. It’s very adaptable too, I’ll add lemon/lime/orange zest to the mix and make an icing with the juice and icing/confectionary sugar or a touch of sweet spice in the batter just to give it a hint of something else works very well.
@Abcdefbdawg2212 күн бұрын
an extreme newbie here, how much would you add to the mix? any help would be appreciated
@htershane12 күн бұрын
@ trial and error basically. If I’m using orange I use the zest of one big orange, lemons or limes I use 2. Either mix it in with the dry ingredients or stir in the heated milk to let the flavour infuse a bit (it might curdle the milk but it’s totally fine when mixing with the other ingredients). You’re not going to get a totally flavoured cake but it’ll have a hint of it. If you use the juice to make an icing it’ll taste a lot more of whatever fruit you’ve used. Same with spiced I’m in the uk and the store I go does a mixed ground spice (I think it’s a mix of cinnamon, cardamom, nutmeg…not a 100% on that) I just sprinkled a bit in with the milk, maybe a pinch at a time, and dipped my finger in to taste test til I got a flavour I thought would work.

Can I pick brains as to the why's and wherefores... my mother made this so successfully. She made a meringue with the whites and sugar first, and then added the egg yolks. folded in double sifted flour and baking powder and then the hot milk mix. Is this old school process? She served it with homemade apricot jam in the centre and freshly whipped cream and fruit to decorate. Chocolate cake was the same recipe also filled with apricot jam and topped with stroh rum chocolate buttercream. I do miss her dearly

Your beater comment was so accurate! My one I've had for years crapped out on me, so I bought a new one of the same brand on Amazon. The first time I used it, I figured there was something wrong with it because the low speed was the same as my previous one's high speed. Sent it back and got a different brand. Same issue. I hate.
