If you have an abundance of cucumbers, Refrigerator Pickles are a fast easy way to preserve them! They also make great gifts too!
Also, DON'T throw away that pickle juice because it has some major health benefits too! It's loaded with potassium, sodium and water which are all good for hydration. Drinking about 1-3 ounces a day will be great for hydration. However it does contain a lot of sodium so be careful.
Pickle juice is great for workout recovery too! It's great for replenishing electrolytes !
It's loaded with probiotics too!
It helps regulate blood sugar levels and is a great source of vitamins and antioxidants!
Do some research and you will be a believer too!
Recipe
12 oz pickling cucumbers (sliced or cubed to your preference)
5-6 (or more) sprigs of fresh dill (I also add the flower of the dill to the top of the jar.)
4 small cloves of garlic thinnly sliced
1 bay leaf
1 1/3 cups water
2/3 Vinegar (I used rice vinegar)
1 tbsp fine sea salt
2 tsp black peppercorns
1 tsp mustard seed
1/8 tsp red pepper flakes
1. Layer the pickles in a large mouth ball jr layering the dill and garlic between every other layer.
2. Mix the brine. Whisk the water, vinegar, salt, peppercorns, mustard seed, crushed red pepper flakes until combined.
3. Pour the brine over the cucumbers. Add one bay leaf to each jar. Cover the jar securely and give it a shake to thouroughly combine all the wonderful flavors.
4. Refrigerate overnight for best results. Consume pickles within 2 weeks.
