In this first episode, learn how simple it is to peel butternut squash by roasting it cut in half with the skin on. Following is a recipe for a simple and delicious butternut squash soup with ginger and a drizzle of coconut milk that can be served as a starter for Thanksgiving dinner.
Butternut Squash Soup
½ of one large butternut squash, cut lengthwise, seeds removed
½ cup finely diced onions
½ teaspoon garlic paste
2 tablespoon olive oil
2 cups chicken broth
1 teaspoon grated fresh ginger
½ teaspoon salt, or to taste
A splash of coconut milk or a dollop of Greek Yogurt, for garnish
