I have been a subscriber for years now and you never fail to teach. Y'know for those of us who will never work in a kitchen it's the little things you do. When you throw a little more oil in the pan that is SO cool. I've been cooking for years so it just made me smile, but for someone learning to cook it's huge. To see a master with over 50 years experience blithely admit he didn't put enougg oil in the pan instantly puts everyone at ease. You're the best Chef. I treasure this channel.

Chef, I would absolutely love to forward you my Cuban family's recipe for Arroz con Pollo a la Chorrera which means like a Cuban style rissoto. Its a well kept secret that needs to come out because I am the last of my family and have no one to pass it on to. There are certain ingredients that my grandmother added that are not traditionally added but hard to decifer what they are. The recipe isnt cheap to make because it calls for real saffron and a real good pinot grigio. I will try to forward you a copy. God Bless! ❤

I love cooking but, some evenings, after a long day at work and being badgered by our dogs for their evening walk, which I thoroughly enjoy once I overcome the activation energy needed to get going, the thought of cooking a meal can be the furthest from my mind. However, like the dog walk, once I play a Jean-Pierre video and start chopping, I get immersed in the pleasure that his world brings. This was the case last night when I made this hearty dish. I substituted the rice with cauliflower rice so had to add a little flour to thicken it at the end. Delicious!

I love the way chunks of food keep jumping out of the pan and fall out, and as a professional cook I'd say this is the reality of cooking. I always say to the guys I'm training that "gravity is our worst enemy in the kitchen", and it's always there. Very easy and very healthy, absolutely amazing. Now I keep bringing up things from Brasil, well I am from Brasil, but been in the US for over 30yrs and I cook what I mostly ate in Brasil. This dish for example, if Chef Jean-Pierre added more stock, it would be a soup and yes my grandma made a lot of it. Now, lets assume some of you here are Brasilian or Latino and eat rice, beans and any meat of your choice and you have left overs. Where I lived in Brasil my grandma used to make something we called a michido, similar to this dish in a way and also easy to do. Depending on the amount of left overs, fry some eggs really well, chop it up in small pieces, add the left over meat until it gets hot, add the beans, add the rice and if you think it is too wet add some Farinha de Mandioca. I like to add a nice amount of black pepper, but add whatever seasoning and herbs you like. Call it a poor man's dish, but it is delicious and oddly I've seen many so called poor man's dish in fancy restaurants lol. Does Peasant food ring a bell and if anyone has ever been to a Brasilian restaurant, how was the Feijoada? This amazing Chef keeps bringing up the best memories of when I lived in Brasil, thank you Chef Jean-Pierre once again and Jack you are doing a nice job with everything else, thank you both.

@@bearpawz_ yes absolutely. Time cooking at that point wouldn’t really matter give or take a little bit. The only critical part cooking. This is the rice. Not enough, and it will be crunchy, too much, and it will be mushy. This will also be the beginning of a really good other dish, you can make a chicken stew basically the same way minus the rice, serve the chicken stew over the rice afterwards versus cooking it together. If you cook the rice separately in a rice cooker, you could use chicken stock instead of water to get good flavor on the rice and then put your chicken with zucchini, tomatoes and spinach, as a stew poured over the rice. That might be easier for a beginner . Cooking rice in a pot like he did. Definitely takes some practice and experience. I bet either way is really good though.

In my country, there's this classic recipe with leftover barbecue and rice called "arroz carreteiro". Whatever meat you have left from barbecue you dice, fry some diced onion, put the meat inside, some wine to deglaze, add uncooked rice, then tomato, whatever stock you have and cook for 20~30 minutes. Finish with some parsley and parmesan. It's a banger.

I think I'd make this as a way to use left over grilled or roasted chicken. It also seems to be a very adaptable recipe which is something that I tend to look for when planning out the weekly meal prep. If you wanted to take this towards jambalya you could with a couple tweaks. The same goes for making this something resembling paella, pilaf or a curried rice. If you are using left over precooked proteins it really does become a one pot dish. I love it!

My Portuguese father used to make a dish very similar to this but just not as involved. He omitted the tomatoes,spinach and zucchini. I’m going to try your method and use skinless chicken. My father cooked the chicken with the skin, it disgusted me, having to remove that slimy skin from my meal. Thanks chef I’ll try this again after all these years.
