Quick Chicken Curry With Winter Vegetables-pressure cooker chicken curry

This easy pressure cooker chicken curry with seasonal vegetables is a favourite in our kitchen in the winter months. This quick chicken curry makes good use of the bounty of flavourful winter vegetables that are all over the markets in Bengal now-new potatoes, sweet red carrots, sweet peas from Ranchi, green tomatoes, tender beans, purple turnips. With produce that good it is no wonder that this requires no great technique or effort. Everything happens in a pressure cooker (or even a pot if you don't have a pressure cooker)!
Do give this one a try while we still have a few days of winter left.

As a Keralite married to a Bengali from Agartala, I've always been amazed about the fact that Kerala and Bengali cuisine have so much in common. This is like the Kerala chicken stew that we would make with winter vegetables. I make this sobji mangsho as we call it very often and is a favorite in our family! Edit - Yes so many similar dishes..shutki or shidol in Tripura/unakka meen, sabji dal/sambar, labra/aviyal, chorchori/thoran , payesh/payaaam, pantha bhaat/kanji..I could go on and on! Both cuisines beautiful, filled with flavor and a joy cooking them! I've been cooking Bengali food since the past 12 years, many dishes taught by my mom in-law and the way Insiya cooks is the closest to what I've learned from her. Love your channel Bong eats ❤️
