Quick & Easy Meals - Chicken Casserole - Cheeseburger in Paradise - Doritos Chicken Casserole
I’m so happy that you visited my kitchen today and I also hope you enjoy all the quick and easy meals from our week. It was another great week and I decided to try out a couple of new casseroles that had caught my eye. They are all quick and easy, delicious and we had leftovers for a couple days too. Today’s video is a collab with my friend Amanda @Faith Food and Family and she has quickly become a great new friend of mine. She is a wonderful and talented cook and just an amazing and encouraging lady in general! And she is not too far down the road from me either. Stella’s Chicken Casserole
1 pkg chicken breasts (I use boneless, it takes less time to cook)
2 cans cream of chicken soup
2 cups shredded cheddar cheese
1 cup chicken broth (I use the broth off the chicken I stewed)
½ stick butter
½ cup mayo
1 small package Pepperidge Farm stuffing mix (cornmeal flavored)
1 ½ cup milk
Preheat oven to 375. Stew chicken breasts until tender (about 1-2 hours depending on size of package. When tender, tear the chicken into shredded pieces and layer in the bottom of a 9 x 13 x 2 casserole dish (sprayed with Pam)
Mix soups, mayo and milk together in a separate bowl. Spread this mixture over the chicken. Spread cheese on top of this, then finish the layers with the stuffing mix. Melt the butter with the chicken broth in a separate bowl in the microwave and spread over the stuffing mix. Cover with foil. Bake for 35-45 minutes.

Yes, you are right, I love simple meals, and plenty meals are even better. This story of mutual is perfect for when you get back from a trip and have nothing, or didn't get to the store or a busy night, just anything. I have made something similar but is chicken broccoli bake. I use frozen broccoli and instead of adding milk to the cream soup I do bit of lemon juice, and then I make up stovetop stuffing only I use less water than it calls for and put it together just like you did in your pie plate and is so good. Love your channel. We're having tacos and fajitas and Hawaiian haystacks!

I always keep about eight of those large cans of chicken in the pantry along with eight cans of Chunk white tuna. I am going to be making the chicken and dumplings using gnocchi tomorrow and I am going to add quite a bit of peas and carrots because I need the roughage and my grandmother always put in some peas and carrots. :-)

I've made this for years it was on the back of the bisquick box called impossible cheeseburger pie or casserole , my kids were little when they came out ,there's a taco one and broccoli one too and some others , there so good I like sour cream and picante sauce on mine lol 😆 everything else looked good too simple meals are the best don't worry about what any one says , just make what you like 😋 and makes you happy we all like everything you do 😇

Thanks, we really liked all 3 of these casseroles. I had a 4th one but we had so much food this week I didn't make it 🤣 We're not ones to just have a single dish meal, I usually have a couple simple sides or salad with supper. So that dorito casserole was a real win for me in the kitchen this week. We had finished off all of our lettuce, if I had had some I would have put it on the top and that would have been just like a big taco salad 😋. So I just tried making this chicken casserole last night... I'm a HUGE fan of a Thanksgiving leftover sandwich and I just so happen to get a bunch of chicken on sale, on the bone, and I cooked some up last night and pulled it off the bone and made this casserole. Im ashamed to say I've never tried cream of chicken soup... Idk why... I love cream of mushroom I just have never bought cream of chicken but I bought some specifically to make this casserole. I mixed the stuffing with some broth and butter and then put it on top of the chicken/cream soup mix and added some cranberry sauce on the side. And... OMG it was so delish!! The cream of chicken is like the perfect gravy...def one of my new favs. Today I'll be making the leftovers into a sammich. I cannot wait! This is def one of my tope 3 new favs that I will for sure be making again and again. I just LOVE it! So quick and easy and delish

I took out a stick of butter 3 days ago for toast and whatnot. Keep in mind I live in Maine. It is as hard as it was when it came out of the refrigerator! I'm going to have to put it on something if you want to go with a cover because I don't know where my butter dish is and sit it under the stove hood light and hope that that works if not I will bring it in and set it in front of the fireplace! :-)

But even though I can't speak in that beautiful way y'all do without being annoying or offending someone, I can try to make southern food. I've been making biscuits homemade from scratch since late last year and my family always loves them. I live in a country where there are absolutely no canned biscuits. So when I move back to the states Lord willing, being able to buy so many easy canned stuff will be such a treat. One batch makes about 11 biscuits and there never seems to be enough especially as our dog will not stop barking (when she's tied up momentarily so we can eat without her climbing all over my mom to get some) unless she gets one 😄.

Looks delicious 😋 😍. I've been fixing alot of Mac and cheese, when I get it done I add butter and the cheese pack then I put a can of Rotel drained in it yummy. And I use the potatoes like you fixed I put butter milk mayo salt pepper quick. Love watching you. You are just so 😋 sweet......

Thank you so much Jennifer coma sometimes I think if my head weren't attached I would leave it behind 🤣 And that Doritos casserole was excellent, the recipe notes said you could also switch out the chicken for ground beef and it was delicious that way too. Our leftovers did not heat up as well for lunch in the microwave. So I would definitely reheat leftovers low and slow in the oven with that dorito casserole. That dorito casserole was good and if you want to switch it up and use ground beef the recipe notes said that was very good too. I love to read different chicken casserole recipes. It all looks good and easy . I made a dorito casserole with groundmeat, like thst we all loved it, no leftovers lol Thanks for sharing, have a blessed week. I have a sheet pan dinner with chicken legs, potatoes, carrots, onions and bell peppers for Monday. Covered with a stick of melted butter, salt, pepper,oregano,paprika, onion and garlic powder and a little olive oil. Coat all of this in a big bowl.Bake chicken for 30 minutes, take it out turn the chicken, put your veggies on the tray , bake for 15 to 20 more minutes. It was really tasty and only one bowl and one pan to clean . Tuesday, taco noodle skillet dinner, Wednesday- loaded baked potatoes, Mac n cheese, corn on the cob. Thursday meatloaf, mashed potatoes, green beans, bread. Friday Han and cheese sliders with French fries cooked in the air fryer. Saturday is leftover day lol

Oh goodness that chicken casserole looks yummy. That whole meal actually. And the Mexican casserole too. I make a version of both of these. My chicken casserole is very similar to yours. But I am going to see what my hubby thinks of the Mexican one you made. It looks bett than ours. Lol And not spraying your dish sounds just like something I would do. Hey Mel!😍 I love easy meals like this! It's great that everything is shelf stable! I need to find a few recipes like this, so I can keep the ingredients on hand at all times. That first chicken recipe is what we called Chicken Supreme growing up. It is still a favorite around here too. A Big kosher pickle and a cold draft beer…lol. Love me some Jimmy Buffett! The cheeseburger and dorito casserole both look great.

I always put green beans, peas or peas and carrots on top of the chicken with this first casserole. I have to add fiber wherever I can as I am on about 28 prescriptions. :-)
