I'M HOME!! Thank you for all your prayers while I was in the hospital. I follow-up with my new GI doctor in a few weeks by telehealth. Please keep the prayers coming, major surgery is out of the picture but surgery is still a possibility. Thank you again. God Bless

Thank you so much for these recipes. I retired a few years ago, but my wife continues to work. Because of this, I have taken over many of our meal preps (and other household duties). Additionally, we had our kids later in life so we still have young adults at home. With inflation and the demands of constantly cooking meals for my family, I have returned to the foods that were fed to me as a kid, and I make many simple one-pot meals from soups to casseroles. Unfortunately, because my mom is long gone I have had to rely on my memory or the internet for recipes. So many internet recipes use unusual ingredients or spices. I'm not against this, but I really don't want to buy some spice or ingredient and then be stuck having the remnants fill up the cupboard only to toss them out later. I'm the kind of cook who wants staple items in the kitchen that I can mix together to make a dinner that my family wants to eat, and these recipes sound exactly like what I was looking for.

We threw the French onion casserole together for an easy meal and threw it in the oven while we got the stuff together for cooking 10 dozen sugar cookies for a church Christmas event this weekend. Whew! I was really surprised at how tasty it was. So good that I've got the stuff for the cornbread casserole on the list for next week! I'm so thankful KZbin suggested we watch your channel. Mel, I cook my green beans with ham hock skins. You can find them in the grocery stores in the season meat section. I am not a fan of sweet greens, collards with sugar etc. Love your videos.

Mel often you save me in the kitchen. I am 70 and I fix meals for us. I let chicken breast get a little to old in the freezer. I cut the bits of freezer burn off and have made some of these delicious chicken casseroles. Altering with the ingredients I have. I appreciate you so much.

Just found your channel and loving all the recipes! Anytime I do anything with canned biscuit dough and have any left over because I am using a different size, I turn them into a small s=dessert for us that can bake up along side the casserole. I roll them a little and stuff them with chocolate chips and nuts or fruit and seal them up and brush with melted butter and sprinkle with cinnamon sugar, Or I cut them up and add to canned pie filling or canned fruit of choice and make a dessert bubble up bake!

Mel, my mom would make her green beans all the time by taking and cutting up into very small pieces two to three pieces of bacon and she would cook them in the saucepan on the stove and once they were close to being done she would add in her canned green beans after she drained them and then season with pepper and salt. That was always my favorite way to eat green beans and it was always great finding little chunks of bacon in with our green beans at dinner time. Definitely made us kids want to eat our vegetables a little bit better! But what is it better with bacon or cheese on it?

I love love love cooking, but it’s just me now, my kids are all grown and so independent, but my uncle lives right next door so I can cook these for me and him!!! This is so awesome for me also as I have become disabled and it is difficult for me to even stand long enough to cook properly, so these should be fast enough to put together that can fix them with tolerable pain and frustration and they turn out right or not burnt and still have great and HOME COOKED meal instead of frozen meals!!!

I just found your channel a couple of days ago, and I enjoyed the videos so much I subscribed! So far I am really enjoying the meals, appetizers, and desserts you’ve featured. I’m 66 and recently retired. I have always loved cooking and baking, and dreamed of all the wonderful things I would make once retired and not under such a tight schedule. What I didn’t factor in was just how tired I’d be once I did retire!! Lol So, your recipes and the shortcuts you add in are sounding great, even though I do have more time. I can’t wait to try some of these recipes! A 66year old s “seasoned” cook can definitely still learn from a younger woman!! Thank you so much for sharing your recipes and time with us.

Hi, I love all the casseroles and I think I'll try the one with the cornbread topping on it. About the small pot you cooked the carrots in, I have a larger pot from that same brand, I haven't used it in a long time. I remember the appeal was the pot was see through and you can see how your dish is cooking from the side. I'm sorry to hear about your friend Stella's passing. I have started steaming alot of my veggies. I read the longer theyre cooked the more vitamins and minerals you lose. So I steam them then put them in a bowl and add most of my spices then and bacon grease and butter. Theyre hot so everything melts good,plus i eat leftovers so they get warmed up again....To me theyre delicious.But to each their own,however you prefer to do it. Its just something new/different that I tried. I was just surprised how good they were!!! The best ive ever cooked!!!

These recipes aren't for the faint of heart or diabetics! ☹ They look SOOOOO good!!!! Lol I might have to try to modify them. Great job! Your husband is a lucky man! I used to cook like this until my hubby was diagnosed with diabetes at 31. It's been 7 years and I really miss these warm, homey dishes but I do what I can. 😊

Hey Mel, I received a set of that same cookware when I got married 30 years ago, and still have every piece. I usually save it to use for Christmas.

The French onion chicken bubble up and the Italian chicken are going on the must try list. I love these new ideas. Thank you so much. When I saw that pan that you were cooking the carrots in I was like what in the world is that thing? Had never seen a cooking pan like it!
