Omg Rachel, we have been roasting several pounds of Hatch Chiles. Not thinking I rubbed both of my eyes and experienced the most painful burning sensation in my eyes. I’m writing to share what helped the most. First I tried saturating cotton balls with milk and dabbing my eyes but received no relief. My wife read about using the back portion of my hands and washing my eyes out with baby shampoo and rinsing several times with water. Lastly I rinsed my eyes with a bunch of saline solution from contact lenses. The saline helped tremendously! I recommend for anyone working with Chiles to keep a big bottle of saline solution and baby shampoo near by! Thanks for your wonderful recipes! Jorden

I bought some chilies a while back and really just forgot about them. Then I ran out of chile powder and instead of buying more that is now so expensive, I found your video on how to make it from scratch. I was a little nervous, but you are the best teacher. You make us feel right at home, just like we are family! I'm Italian, but my favorite food has always been Mexican food! I've been watching you for a while now but have strayed off to see what other people are doing. What you're doing is teaching people to cook authentic Mexican foods is an easy to understand format. I'm in Denver and every restaurant I go to serves pre-made red and green chili and that's a drag because everything tastes great except for their cookie cutter chili sauce. So bravo to you. I also think your enchilada sauce has a greater depth of flavor than just about everyone out there...thanks for your lessons, they go a long way with me!

Thank you so much for the recipe share and storage tip on the bags of chilies! I have a wonderful Mexican community & 2 stores near me in Fremont & Lindsey OH, to shop local stopping after work to get some and make this. The local store chili powder is so americanized! I've always wondered if I've stored them wrong and minor always so dried out because I put them on a shelf in my pantry.. ps. We even have them in Walmart, but we all need to shop small / local and support our communities.

QUESTION? Love, love, love your videos. I went to 1 mexican grocery store and 2 regular grocery stores that had large ethnic food sections and bought bags of chiles from all 3. None of the ancho were near the size you showed. If you could include the approximate amount of the chiles after grinding, that would be most appreciated. After grinding my Guajillo chiles, I had 4 tsp; these also seemed small compared to yours. My ground anchos (I used 5 due to the small sizes) yielded 8 tablespoons. Are this amounts what to expect for the recipe? Hope to hear back. Keep up all the amazing videos please. L
