This Escovitch Fish, which is basically Fried Fish topped with a delicious pickle sauce is so absolutely delicious!!
It’s a must try
Jamaican Festivals • Jamaican Festival Dump...
Ingredients
2-3 pounds Red Snapper or any fish
Salt & Black
All purpose or any fish seasoning
Cooking oil for frying Fish
*PICKLE SAUCE*
1 large carrot (julienne)
Scotch bonnet peppers
Bell peppers
1 onion
Pimento peppers (for flavor) if available
Pimento seeds (8-10)
2 gloves garlic
Fresh thyme
1/2 cup white vinegar
1 tbsp sugar
Pinch of salt and black to taste

This is exactly how my late mama did it. Sheer heaven in the mouth. She liked to do it for Sabbath lunch when we were kids. I just posted a story with some of my best Sabbath memories and foods like escoveitch fish and fricasee chicken were part of those timeless memories I have about my mama. She was an excellent cook. So many videos on KZbin showing the wrong way Jamaicans make it. Glad I found your channel and recipe. You got it right. 👍

I made the pickled veggie sauce once and my mum and I were hooked. Felt really good making food from Jamaica 🇯🇲 here in Ghana 🇬🇭 and it was yummy. It’s a forever food for me now. Thanks for sharing 👏🏽

Chef Racquel I like watching you prepare your fish. Not many people remove the fins and tail from the fish. I tell you, you are a natural chef. I have gone to restaurants in the claiming to be top rated and ordered fish and was so turned off to see fins, tail and the bones on the back. Keep the videos coming. 👍🏾

Yet again you share your cooking skills with us. I wish everyone would remove the fins and the spikes on the back of the fish like you do. I was taught to remove them also, it makes the fish look more appealing. A+ for you as always

Coming from someone that has never tried Escovitch fish before….do you eat the eyes and whole head of the fish as well? Or just the meat leading up to the head and tail?

lol 😂 Coming from someone of the Caribbean, yes eyes and head is eaten, only the bones are spared 🤣 But you know the choice is yours, eat what you prefer and how you prefer.

Wow, I like the way you sliced the fish. How can I get my fish to have a lime flavor all throughout without the pickle sauce? I've tasted some people's fish and it's fried dry but it's like the lime is marinated into the fish skin.

This is a great video. I've always wanted to know how to make this. I just want to know. Is it best to dry the fish after washing and then to season the fish? Only because when putting wet seasoned fish in hot oil, it tends to make the fish start to boil cook? Please tell me what you think?

FYI everything was crunchy and extremely flavorful, the escovitch pickled sauce took less than 5 minutes Do yours however which way you like ok 👍🏾
