I love your parents! They crack me up! This does sound wonderful and I've already ordered the special ingredients on line. I would love to see a segment on the spices you used from the round container. I know it's common for Indian households to have such a grouping of spices, but I would like to know why these spices are put into such a container. I assume they are the spices most Indian cooks use? Another great vid!

Please can you do a video on how to use the extra indian spices that you've used in this dish (amchur, asafoetida and dried fenugreek)with other curry dishes? Such as how much to use and when you would use them. I often use the same spices, cumin, coriander and turmeric, and want to level up! For now, I will make this dish and experiment. Something I stumble over regularly with recipes from the US - your medium-size onion (or medium-size cauliflower, potatoes ... etc) are huge compared to those I get in out local super-markets und even bigger that what I get at our farmers-markets.

I used to boil the vegetables first. I made this today - baked cauliflowers and potatoes made a huge difference: the texture is crunchy, and the flavors of the vegetables are a lot more pronounced. Thanks for sharing the recipe. Love it!

I just finished eating this delicious dish for lunch. Only made a couple modifications from your recipe. I chopped up a whole jalapeño pepper and added it to step 2 in "making the masala." I didn't have fenugreek leaves, so just used garam masala and lime juice. It was necessary to add a table of water here and there to keep things from sticking or getting too dry. I'll definitely make this dish again. Thanks!

Your parents are so cute! I am curious why you prefer to use serrano peppers vs Thai chilies? You’re the first person I’ve seen who uses Serrano lol. It’s also neat you add it later. I am used to doing oil, then cumin, then hari mirch, then onions for any masala, then tomatoes etc. Anyway I am not a huge aloo gobi girl myself but I’ll definitely check this out. Edit also i want to say that I am impressed by the thought and effort you put into your recipes. You really try to find the best recipe and it shows!

Oh my YUM! Veggies just the way I like to cook them, too, and all that flavor! I've never liked Aloo Gobi at restaurants for the same reasons you stated. This fixes everything. Totally getting a Serrano at the store and making this ASAP! (Also? Your parents are precious! 🥰)

I always get aloo gobi or mushroom saag at Ambar India when I visit my daughter in Champaign, IL, with roti because it's vegan (like me!). They have delicious food, and I never get quite the same spice profile when I make it at home.

I always thought asafoetida/hing smells amazing and never overpowering. I have this habit to grill mushrooms a lot, but not before I marinate them with a little bit of oil, salt, white pepper and of course asofoetida. Good amount of it. We all enjoy the results.

Asafoetida in Indian cooking is used in place of onions and garlic as many religious groups in India (such as Jains, Vaishnavs, etc.) do not eat onions and garlic. Use of asafoetida is more common in Gujarati cooking as most Gujarati style curries don’t use onions and garlic. Asafoetida has a concentrated onion/garlic flavor. It has shown to reduce flatulence, it is used for asthma relief, it reduces blood pressure by thinning blood, helps treat IBS and might be useful in blood sugar control (as per animal studies). It is FODMAP-diet friendly. It is used to help treat bronchitis, whooping cough, constipation, and muscle spasms. It helps with nervous conditions and is calming (sedative). Human studies show that 250 mg twice a day is safe. Animal studies suggest that large doses can cause diarrhea, gas, headache, mouth swelling and anxiety.

Thanks for this. I just made a double batch to freeze and it was great. Good recipe all the spice proportions are right on point. Wish i had the dried mango and the fenugreek leaves but i just squeezed in a half a lime. I dont think i can have assofacheetah in my house or freezer anymore. I've been cooking out of Julie Sahni "Classic Indian Cooking" for 20 plus years and its nice to branch out to other recipes.
