Hi Kendra! those look SO good! Just placed an order after seeing your video (made sure to reference it for the question "how did you hear about us?", in case they want to sponsor you at some point). Got Vaquero beans (so cute look like cows!), Xmas Lima beans and royal corona beans (because of you!), Flageolets (because French :D), and Cicerchia beans (just because they looked like an interesting shape). Ooooooh those are all super good (aren't the vaqueros so cute?!)! I have tried all of those except for the cicerchia ones - I saw those and they seemed so weird and exotic and I wasn't up for it, haha (and I saw something about them being toxic if you eat too many - haha now I kinda want to try them!)! I hope you will love your beans and thanks for mentioning me! Kitty is doing much better, thank you so much. :D. Her tummy fluff is growing back in and it's just sooooo cute and irresistible, but she hates having her tummy touched, so I end up getting slapped or chomped a lot (which is really cute, so I keep petting and kissing her tummy and keep getting slapped and chomped...that poor cat!). Let me know how that book is - just looked it up and it looks super interesting!

Rancho Gordo is amazing. I’ve tried all the soak/ no soak methods as well. I’ve realized that I prefer the tried and true no soak. Just wash them, into the pot, plenty of water, boil then slow simmer. Here in Texas the Mayacoba beans are readily available at every grocery store. But I wanna try R.G.

The only dried beans I've ever made are lentils. I usually use canned beans because I've been intimidated by dried beans, but these look so interesting! I need to check out the website.

I was sooooo intimidated by dried beans, too! Once you have cooked them a couple times, it becomes super easy. And they're really tasty and the variety is so fun!

I thought that picture looked familiar I have their cherry? bean one of them any way, my daughter got me for christmas. Which reminds me: I wanted to grow some of them! you want to "destroy" the lectins in dried beans, so soaking is a good step, but definitely pressure cook.

Oh yes, I need to save some of my faves to try to grow! I need to get out my Instant Pot to cook up some beans. I go on Instant Pot kicks and will use it a lot, then it just sits in the corner for months...
