That comment you read was not wrong, i used to work there, and they get potatos straight from idaho, cut them in store and soak them in water. After that, you fry them for 2 minutes and pull them out for at least 1 minute, and then you fry them until golden brown. The real reason you get so much is because they dont want to serve cold and limp fries, so we're instructed to throw as much as possible to avoid waste.

Former Five Guys employee, you were right about the fries. Cut in store, water bath to remove all the starch, fried twice (some stores will have whole bags of potatoes next to the free peanuts) Every other veggie is also cut in store, even the fruit for the milkshakes is cut up and pureed, patties are also rolled and weighed in the morning Also, we measure out the size of the fries and then add an additional scoop on top to really fill up the bag. Five guys is veeeery routine-heavy and prides itself in cleanliness, by far the cleanest restaurant experience I've ever had, I struggle to call it fast food despite it being a franchise that also pushes a 8 minute limit on orders. They don't have drive-thrus and all ingredients arrive fresh in the night/morning before open, a lot of prep occurs through-out all hours of the day. It's high quality burger/fries, even if it is a bit more expensive.

i gotta say it was my fav work experience so far, and i worked a lot of part time jobs up until this year. very stressful but you always had something to do + creating fun combinations with your co-workers like the snickers shake and stuff like that really made all the routine so easy and almost secondary compared to the memories we made together .. like prepping for the five guys olympics :')

I worked there too sure its a little pricey but if you know fast food and how it works anyone would understand why it’s that price so many other fast food places use low quality ingredients, some staff do not care at all, theres no real skill and preparation in a place like McDonalds, so there you get what you pay for and at five guys you also do get what you pay for, like they said it’s like a restaurant price except the speed you get the food and style fits in the “fast food” category and someone like me who’s not a big fan or burgers they do have great burgers in my opinion, and usually some of the best employees and they will do anything to make the customer happy, they always offer free stuff if there’s an inconvenience great place to work would never work at a fast food place again unless it was that

As a former five guys employee for several years. Yes potatoes are rinsed and cleaned in-store then cut with a dice block by hand. Then they are spun around either by hand or with a machine, depending on the store to clean out the starch. After that they sit in cold water until they are ready for frying. Wich is done in peanut oil for say 2 and half minutes. ( or at least you get a slight color change and the bubbles receed. Then we would hang them up and let them cook internally for a minimum 5 minutes. Until they are ready for the second fry for a similar amount of time.

Very important to note here that the second fry should be at a higher temperature (about 180°C after a first fry of 160°C). Think of it as analogous to reverse-searing a steak, you're cooking the inside and then putting on a good crust.

@@grimecube I am a Shift Leader at my local Five Guys. In the training, it says all fryers are always set to 345°F (173.33°C), no matter if it's a pre-cook or a final cook. The reason for this is to have a more consistent and equal cooking of the fries. It's also so that the cooking process will take around the same amount of time for the pre-cook and the final cook.

ive worked at a five guys before for a short while, im not sure about everywhere else but, the place where i worked at, they had their kicthen, their tables, everything clean, dated, like it was TOP Notch. i felt so comfortable eating what was servered without having to worry about it and it was a plus that it was good food and best fries, so fucking well seasoned

I worked here everything is prepped daily and fresh, they do cook fries twice but before that you have to cut and wash them in 3 different sinks and we were told to fill up the fry cup and extra scoop for the bag lol, we had 2 hours of prep time before opening... my favorite part of the job was the unlimited drinks and free lunch

So chef here, the reason the fries are double fried is the first is a blanching to get the fries cooked at a low temperature with out crisping. The second frying it the actually crisp the already blanched fries.

They do cut them in the store. Their cutter is right above the fryer so they cut them and they drop straight into the fryer (at least at mine) and the double fry is also true they have dedicated first and second fryers

Working at five guys for the better half of a year, the prices are definitely outrageous but the burger is also expensive cause all the toppings are free. At McDonald’s you’d have to pay an extra .50-2 dollars for additional toppings but not at five guys. It’s practically a waste of money to NOT get toppings. There’s also insane labor cost since we roll and stamp each individual patty in the morning instead of getting them in a big frozen box from a truck.

I’d say you’re in the minority of not wanting “all those extra toppings”, at least in Five Guy’s demographic. But as Charlie says the extra 5 dollars for a better quality burger is definitely worth it IF you have Five Guys money.

In North Dakota the bar area is open to the public and we can watch them make our food. They cut fries on site here. We also get free peanuts, not sure what it’s like at other locations.

Used to work at 5 guys. Yes, they double fry the fries. They get a pre-made batch, which isn't fully fried, but once they're ordered they drop them in again and the frying process is much quicker than frying them from the start all the way through, but they're very particular about how long you have them dropped for each time they're fried.

most places that even sell them charge you over $5 for 1. When i worked at a restaurant we didnt sell them, but we had a regular that would always come in and order chocolate milk and a grilled cheese (we didnt even sell chocolate milk either). The owner would charge the dude $4 for each and leave a tip, spending $10 everyday for something that would cost less then a dollar to make at home.

I think they're meant really just for picky children. One of my little brothers staunchly refused to eat a burger until very recently because they didn't like them. I also thought he was insane.This is also the reason burger restaurants often offer chicken strips. I have to assume it's for the situation of a whole family eating but they've got that one spoiled brat who will only eat things that are orange, because if you went to a Five Guys and ordered a grilled cheese and fries by yourself and you didn't have autism spectrum disorder or something similar, people would think you're a lunatic.
