the manga explains it way better imo! "the owl" is the shop manager. "the one-eyed owl" is his daughter, eto. "the one-eyed king" is a title that transferred from eto, to arima, to kaneki! even after reading the manga first, the anime was so confusing to get through bc the pace the production had to keep meant that a lot of those specifics got lost (especially in translation).
