Raspberry broth:
700 grams of raspberries
70 grams of sugar
Raspberry leaf:
10 grams of glucose
170 grams of raspberry broth
50 grams of isomalt sugar
15 grams of potato starch
2 grams of salt
Yoghurt mousse:
4 leaves of gelatine (1 leaf is 1.67 gram)
60 grams of yoghurt
150 grams of yoghurt
160 grams of double cream
40 grams of sugar
1 vanilla pod
Lime cream:
250 grams of milk
65 grams of sugar
The empty vanilla pod I used for the yoghurt mousse
100 grams of egg yolk
20 grams of corn starch
1 lemon zest
100 grams of white chocolate
Almond crumble:
50 grams of almond powder
50 grams of sugar
40 grams of flour
2 grams of flaky salt
50 grams of butter
20 grams of melted white chocolate
