To make any raw cake, you will need a good quality blender. If you don’t have one, your cream will always remain a bit grainy, which is not necessarily a bad thing. However, if you like cakes with silky creams, you will need to do some serious shopping.
Another great thing about raw cakes, besides outstanding taste, is simplicity. All you need to do is weigh the ingredients and pop them into your blender! No baking, no greasy baking pans, easy peasy!

I made this for a birthday party and it is absolutely fucking fantastic. Also makes a great breakfast. Thank you for this recipe. I have been making my own versions of raw vegan cakes which are delicious and moussey but the cacao butter really added something magical - a firmness that really holds up at room temperature. I can't wait to adapt it to different flavours like berries, matcha, peanut butter, etc... 10/10!!!!!!

Oh ya - I doubled the recipe for my first time and it also turned out great... My vitamix *almost* overflowed lol. Delicious tip: don't scrape the chocolate cream from the blender. Add boiling water and a dash of oat milk to the blender and whir it again. It helps clean the sides of the blender and you get a delicious hot chocolate after your hardwork!

Hie. . really liked ur recipe 😀 i have made a very small one using vegan butter instead of cocoa butter but i am sceptical about it setting. If we freeze it for a couple of hours will it set properly while removing the acetate sheet? Thank you 😊

Hi, great recipe! Im intolerant to almond milk and cashew nuts. Can I replace almond milk with coconut milk? And cashew nuts with some other nuts?

Hi, I like your recipes especially the raw cakes. I have a similar cake recipe only the base uses almonds instead of hazelnuts. What I like about that though is that is using lemon juice in the cream layer and in my opinion is well placed because it balances the fat content from cashews and cacao butter. Would lemon juice be appropriate for this cake? Thank you for your work and for your sense of humour.

Hi, thank you si much! 🙂 I personally don't like adding lemon juice to a chocolate cake because I don't like the extra acidity, but with fruit flavors it is a great combination. I don't think there is a rule, just follow your taste buds! 😉

Hi, it is easier to cut it when it is defrosted. So, take it out of the freezer and remove from the mold. Put it in the fridge for a couple of hours and then cut it! :)

Hi, it should work with regular butter! If you want to make it vegan, you can use coconut oil (if you can buy it where you live). :)

@@aishab3215 yes, it is a cake ring. You can buy it online, I don't know where you live... you can use any 6" mold though.

Hi, thanks for watching! The quantity stated is before soaking. If you are using fresh, soft dates, use the same quantity, just don't soak them. If the mixture is too dry, you can add a teaspoon or two of water until it becomes sticky.

@@pastrymaestra I did this and it worked just find. I had fresh, soft medjool dates and I increased the quanity of those and added a tablespoon of water here and there until the crust started to stick and form a ball.

No, you can't keep it outside, especially in Summer. Keep it in the fridge.

Hi, you could sweeten the chocolate cream with dates, but you will need to replace liquids with some water so the cream doesn't become too thick.

I made this cake today (very much in advance ) Sunday the 7th Aug 2022 n to cut for my boy’s 22nd birthday on Wed the 10th. So my question is should I leave it in the freezer till Wed or should I bring it down to the freezer section by tomorrow Monday the 8th. Thanks in advance

Hi, I would take it out and put it in the fridge on Tuesday so it has enough time to defrost overnight and on Wednesday during the day. I hope your boy will like it! :)

I'm sure it's amazing and delicious. I'm looking forward to making this recipe for a cafe this week. I'm puzzled, though, about why promote something as free from sugar, but use maple syrup as a key ingredient. Maple syrup is a refined sugar - it is pure sucrose from the maple sap instead from sugar cane or sugar beet. If you say sugar is nasty, but then use sugar in a recipe is very confusing.

Well, I hope you liked it! This cake is refined sugar free, and there is a difference between refined beet/cane white sugar or maple syrup that is only heated until concentrated enough so it doesn't spoil. Also, maple syrup in small quantities like in this recipe is well tollerated by my diabetic friends, so it doesn't have the same impact on the body like regular white sugar. If you still don't want to consume sugar at all, you can always choose stevia or other non carbohydrate sweetener. :)

Sure, you can melt it in the microwave on low heat or in the pan, also on low heat. As soon as it melts remove from heat. Before melting I advise you to cut it into small pieces if you bought it in a form of a block. :)
