Homemade pickle with green tomatoes, carrots and cauliflower, you can add your favorite vegetables and with this recipe you will always get a perfect pickle, tasty and healthy.
Ingredients:
1.7 kg of green tomatoes
500 g of carrots
600 g purple cabbage
300 g gherkins
1.4 kg of cauliflower
1 bunch of celery
180 g of coarse sea salt
4.5 liters of water
The proportion for the brine is 40 g of salt for 1 liter of water.
From this amount, I make two 3-liter jars and one 1.7-liter jar.
Depending on the jars and whether the vegetables are whole or cut, the water and salt may vary.
The first 4-5 days, shake the jars every day.
Depending on the temperature and the size of the vegetables, the pickle may be ready in 10-12 days or in about 20 days, in cooler weather. I keep it on the terrace.
When it is ready, fermentation is stopped with chopped horseradish root or sodium benzoate.
