FWIW, raw milk makes incredible kefir - it actually works BETTER than pasteurized.

Thanks for answering. Since then, we have become professional kefirists. We started off with 2-tbsp of kefir grains, and they have multiplied so much that we've had to discard gallons of grains by now. They seem to proliferate more in raw, which is pretty much all we use nowadays.
