I do the same as you, though different tools. I'd be a bit more precise, it's not so much that a raw file has more data, it has more information (they are diferent things). When you process a raw file you (or the software, without you noticing) sets a black point and a white point. Everything in the file below the black point and above the white point is thrown away and cannot be recovered, but it's there in the raw file. Also I prefer to set the final image tonality with the advantage of a big monitor for feedback, rather than the black art of 'nailing exposure' which no-one seems to be able to explain with any clarity. I also arrange my files so that I can use the JPEGs as a quick reference for he raws. That's just the way that suits me. Everyone has the right to their own preference.
