You should make an A3 (12 x 16 inch) size quilted pad for your cat to lay on, then she would just lay there and watch you work, I lay a junk mail cat-a-log down and my cat thinks it's for her... lol.

The muffin recipe is .... Courgette and Chocolate Muffins Ingredients Makes: 12 muffins 200g plain flour 150g caster sugar 1 teaspoon bicarbonate of soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 egg, lightly beaten 120ml vegetable oil 60ml milk 1 tablespoon lemon juice 1 teaspoon vanilla extract 125g grated courgette 85g mini dark chocolate chips 60g chopped walnuts Mix the wet with the dry and bake in muffin cases at 180'C for 20 minutes

Perfect! Whew, that must have been frustrating. I will share again the info for US viewers that caster sugar = superfine sugar in the US. I am married to a Kiwi and we live in NYC so I have had to learn to convert UK/NZ recipes. I have to say I love using weights rather than cups when baking now -- so much more reliable outcomes! BTW if someone has a hard time finding superfine sugar just give granulated sugar a little whiz in the blender to get something that substitutes for superfine 💜 (p.s. hope Norma is feeling better!! 🐱)

If lazy I use cups and spoon measurements rather than get the conversion chart and scale out. But weighing as I learned in Britain is definitely more accurate. Also I learned if taking granulated sugar past the "little whiz" in the blender makes more of a powdered confectioners sugar. Was an interesting mistake.

I found your channel a couple of weeks ago and have been feverishly going back through old posts and enjoying every minute of it. I even made the cauliflower, chick pea and potato curry (Jamie Oliver) the other night for dinner and tried my hand at sewing some around the world quilt blocks using some leftover Kaffe Fassett fabric. Kate, you are so dedicated. I will be honest I would have thrown my hands up after the second time of trying. I do have some scales and I am going to give this recipe a try as my granddaughter loves chocolate chips and has them in her pancakes. Just in case anyone was wondering, Caster sugar is sugar that is ground to size somewhere between regular granulated sugar and confectionery (powdered) sugar... so in the U.S. when a recipe calls for caster sugar we need to grind up some regular granulated sugar a bit more to make super fine sugar. Very hard to find caster sugar here - at least in my area.

Hello Kate! I had just finished making a dozen loaves of zucchini bread and shipping them off to friends and family, but never thought about adding chocolate chips, they would have been so delicious. My recipe called for 2 tsps of cinnamon and I was a little disappointed because it did seem to overpower the rest of the loaf. Thanks for your version, congratulations to your daughter.

We have castor sugar, it's just labeled "super fine" and not all markets carry it Mostly higher end ones. Most grocery stores just have white sugar either came or beet sugar, brown sugar and powdered, Plus all the sugar alternatives. What folks call castor sugar comes in a box of about 12 to 16 ounces and it's labeled boldly as super fine granulated sugar. It's sold for use in coffee or tea, so the package reflects that.
