As I always say, I am against bastardized recipes. I'm not just saying this for Italian cuisine, but also for all the other cuisines in the world! I have made this mistake in the past, which I regret, so PLEASE leave other food cultures alone! They really don't need your bastardization!

As a Chinese, I am not even mad. There's a lot of fried rice recipe in the world, example, Malaysian, Indonesian , Chinese, Japanese, Korean fried rice and so on. You can create an Italian version of fried rice too

Let me add a not mad Thai to the mix. You can fried rice anything! Just make it taste good and perhaps make sure it still has rice and eggs. It would be wonderful to see what good and different flavour profile people come up with.

I make Italian stir-fry a lot. It’s a good, hearty dinner in a short amount of time. The guy with a beard in the kitchen didn’t use fresh ingredients. Leftover meatballs that he didn’t make himself? 😱

I think you may have missed the point of what babyish was doing. He was improving using leftovers in the fridge to make a quick midweek meal. He wasn’t aiming for fusion cuisine, he wanted to show people how to make something from what you already have even if it isn’t meant to go together.

Hi Vincenzo, just offering a perspective as an Asian. Babish’s fried rice recipe may be unconventional (can’t comment on the taste) but it is in no way offensive to us. Even here in Malaysia, we have so many non-traditional varieties of fried rice recipes, including one called ‘nasi goreng USA’ (literally translates to ‘USA fried rice’) that has nothing to do with United States. All we care about in the end is that it tastes good 😊

I believe a lot of people here are taking this recipe way too seriously (and at no point did Babish claim to make something authentic) and kinda miss the point of the original video, which was about what leftovers do I have in the fridge and what could I do with that and just trying something that's a bit outlandish but might end up tasting good. Don't knock it till you try it.

Fried rice dishes used to essentially be whatever leftover you had fried in a wok with rice and an egg. You can essentially fried rice anything

Vicenzo If you want to make egg fried rice with an Italian twist, you should try doing it using guancial: the oil released by it gives an amazing flavor to the rice and with the egg, it is as close as it gets to a fusion between fried rice and carbonara. I made it, it is really amazing !

Hi Vincenzo. As an Asian I think this dish is totally fine and not offensive. Fried Rice actually has a very broad and flexible interpretation. It needs to be fried and it needs to have rice. That is why there are as many fried rice variations as there are ingredients available throughout the world. It is not like carbonara, cacio e pepe, a la gricia, aglio e olio where the dish has a more limited interpretation. Your tomato fried rice wouldn't cut the standard because the liquid stopped the fried process. Babish' fried rice would be acceptable because it is literally fried rice. The egg yolk on top is actually common. He could also have done a sunny side egg, half scrambled, again there are no strict requirements. Alex/FrenchGuyCooking made a French interpretation of the dish and served it to a chinese chef.

It's okay actually using tomato sauce and make Italian style fried rice as long you don't claim it as authentic . In Surabaya East Java, Indonesia, we use tomato sauce for replacement of Kecap Manis (Sweet soy sauce). Pecorino cheese is something interesting also because cheese sprinkle as a topping is still make sense in fried rice. But in vinegar thing, I agree with Uncle Roger because it does not suit well in fried rice. If you want to add acidity, just make pickles separately like we usually did in Nasi Goreng, don't put on rice.

I agree that pecorino cheese is also a good addition to fried rice. It adds a nice salty and nutty flavor to the dish. However, I do agree with Uncle Roger that vinegar is not a good addition to fried rice. Vinegar can make the rice too sour and can also make it mushy. If you want to add acidity to your fried rice, it's better to do so with a squeeze of lime juice or lemon juice.

I think Peranakan cuisine will give you a heart attack. It's a fusion of Malay and Chinese cuisine, and therefore a total bastardization of both cultures.

Malaysians are very creative with their food because Malaysians have been a multicultural country. Yes we Malaysians bastardised food, but it is usually out of necessity. Such as precious Parmigianino Reggiano, Pecorino is very rare and expensive here.

If no one ever "bastardized" recipes, there would be no such thing as any authentic cultural dishes. All of them are bastardized from something else. There is nothing new under the sun. All pasta is bastardized Chinese noodles. Does that delegitimize Italian regional cuisine? Not at all. It's not sacrilege to eat, to invent, to borrow. It's just food.

I'm all for keeping authentic dishes authentic, but if I were to make an Italian style fried rice, I'd do the sofrito, the rice of course, Ventricina del Vastese salame cubed/diced, some egg, some chicken stock to moisten the rice, and finish with pecorino... Sometimes less is more.

In my country we make kind of meatballs with rice - ground beef mixed with rice, wrapped in cabbage leaves and slowly boiled in tomato sauce. It is actually pretty good. PS: I tried Yours gnocchi recipe - simple and tasty, I am going to make it more often, thanks!

some examples u can make rendang slight diffrence variation maybe because diffrent county of the west sumatra, but when i go to neighbour country like Singapore and Malaysia, almost they put diffrent dish and call that rendang lol some Minang decendent in sg or my need to guide them and i agree 100% with u, its difficult to find good egg fried rice

I didn’t have a problem with this video. Mostly because he made it pretty clear that it wasn’t authentic. He was just working with what he happened to have on hand in the fridge. I don’t think anyone would watch this video and thing “wow authentic Italian food”

I have been watching this channel for a long time and i have to say, it has given me a different perspective on Italian food. I used to find it boring but now i get it for the most part. I still struggle with it because it seems to really discourage any creativity. Maybe someone can change my mind?

@vincenzosplate Oh, I do appreciate it! The education you have given is first class. I am the problem here haha. I make a lot of cocktails and so I have a pretty diverse palate. I'm just struggling to bring creativity to Italian food because it seems like any creativity is deemed offensive.

I think I finally understand why Americans use that much garlic. I asked one of my cousin who live in US and he said that in US fresh garlic is not fresh at all and it is usually not even close to the flavour of real fresh garlic. He compared it to Aglione. Not sure if it's true for everyone in US, but I think that can be one of the main reasons why they use that amount of garlic. Also I tried real aceto balsamico too after watching the uncle roger reaction to this one. It was on my experiment with egg fried rice and it was actually really good (I think good aceto balsamico is good on anything really... it was an easy win, but it was surprisingly good). But maybe the best idea was to use Pork Fat instead of Peanut Oil like Liz said in the same video where uncle Roger make egg fried rice... I don't usually have peanut oil in my storage while I make a lot of pork fat (every time I'm making carbonara I freeze some of the extra fat). My version was: Pork fat 1 Shallot 1 Egg +1 Egg Yolk Spicy Paprika 1 day old Rice Aceto Balsamico It wasn't bad but I don't really know how real egg fried rice taste like and I will not suggest anyone to try my experiment. PS. The main reason I don't really experiment with asian cuisine a lot is because many ingredients are not really easy to find and I don't use them a lot so even if I buy them I will not use them that much... I think that's also the main reason most people around the world change how they cook based on where they are.

As an American, I can confirm. Our garlic, just like much of the produce in our grocery stores, is not even remotely fresh. They're often picked months before you buy them. It's only been getting worse since covid. I can't remember the last time I was able to find potatoes that were free of mould at my local stores. Frozen and canned vegetables and garlic powder are often times better options than our fresh produce in terms of flavour, quality, and avoiding chemicals. Farmers markets are also not always an option depending on where you live. This is why Americans cook the way we do. Many of us don't have access to good quality ingredients without shelling out more money than we can afford, so we do what we can to make low quality ingredients taste good. Hence why we use both garlic and onions all the time. We just learn to make do with what we've got

My mother had a friend that was 100 percent Chinese. She showed us how to make fried rice and egg rolls. Simple, But authentic ingredients. I still have the recipe! Everything from scratch! Even the wraps!

Just in case you are struggling to understand. Cook something Italian (or any other country): buy all the stuff the Italian (or the country of your choice) shelf in the supermarket holds and melt it together in a big pot. That’s American style. BTW, started 2h ago with carrots and celery added beef and tomatoes and spices over time and now I wait until the stuff turn into bolognese on lowest possible heat. But I have to say, I grew up near the French border in an area where eating is as much culture as it is in the south across The Alps.

As an Asian, the way I see it is he came up with something that would be a mix of Filipino garlic fried rice, Japanese tamago kake gohan, Chinese egg fried rice with European ingredients, not a bad idea but the raw egg might be contrary to the traditional texture of fried rice which should be loose and fluffy instead of wet and sticky; all in all everyone has the freedom to do whatever style of fried rice they want, it is technically just rice that is fried hence fried rice, if you put Chinese egg fried rice on it specifically then that is the time that proper prep and ingredients count. As Asians we are not really disrespected easily, I'm happy other cultures are playing with our concepts as long as the end product is good then all is well.

Well sir, with all respect, every 'Asia' got a different ways of making fried rice. Hell even that is depend on 'what is in your fridge right now'. as for a Korean and for as I know, fried rice is not a some strict pasta recipe must be followed by your heart at least in here. more like 'man I need to take care of these foods before it goes bad' recipe. ofc there is a standard recipe in general but that is like a basic element, can be various in different region and your preference. For example, Kimchi fired rice is most common in Korea but someone likes to put ketchup and mayo or cheese and that doesn't matter. And yes, there is a whole different way to cook fried rice depend on what country you living in. If you upset about this is not supposed to be an Italian way that is fine but you really don't need to speak for 'Asians'. We got a own nationality. Just like Italia and Spain is belongs to 'Southern Europe' but got a completely different ways to make tomato soup and none of them can become a 'Southern Europe Traditional' recipe.

I feel like you missed the point of Babish's video, which was to encourage people to just have fun with leftover ingredients and not be afraid to experiment. He wasn't seriously suggesting people make Italian fried rice a staple in their recipe rotation, but rather that they be creative and use traditional techniques to enjoy themselves in the kitchen. Surely that's to be applauded?

"it's just fun". But why is it such a bad thing, that food is fun? Is it not just about the label at this point? My mother is one of the best cooks I know and she has 0 "knowledge about cuisines". She always just makes up dishes of what she finds on the market and what tastes good to her. I'm sure I could easily label half of her dishes as asian/Italian fusion, but who gives an s? It tastes delicious. That's the whole point. From my point of view, these restrictions prevent creativity and innovation. There's definitely a point in educating about tradition, but no one in this video tried to give a masterclass in Italian, Asian, or fusion cuisine. This is just. Fun. And that's okay in my opinion.

The original iron chefs used to do fusion cuisine. There were 4, iron chef chinese, Japanese, italian, and french. They would usually take japanese ingredients or sometimes foreign ingredients and make a fusion of their respective techniques with a japanese flair.

But also sometimes tradition is meant to be broken. If we just stuck with tradition, then food would be boring. For example I'm sure Sicilian food is different than Roman food, and NY Italian food is different from the different regions of Italy. I think food should be fun and experimental, as long as it all works together

If I were to make an "italian" fried rice, it would likely start with (off the top of my head) a soffritto (carrots, onions/shallots and celery), add some chopped up protein (in the case of babish, some refried meatballs but could easily be leftover piccata or some Italian sausage that is broken up... Just needs to be something that can be broken up into small pieces) and maybe a little something to add some umami flavour after adding the rice. It doesn't need to be a complex dish.

I think with the 'soffritto,' he was trying to cook the vegetables as you would in Chinese cooking: very lightly so they stay crisp. He could have used those same vegetables in Chinese style fried rice and they would have been cooked just like that.

Actually in Greece we have a soup which contains meatballs mixed with rice, it is called ''Youvarlakia''. The combination is not that weird as it sounds, it's quite good. 😉

Again, the rice in meatballs is pretty common around me :/ its just a cheap filler and holds better than bread crust so they can be frozen and thawed. I prefer no rice though

American garlic generally is not very strong. When I am in Bulgaria, the garlic tastes soooo strong, assuming in Italy is the same. That is probably why Americans use more.

Except i doubt if the vegetables is well cooked, and he should seperate the rice before put the rice into the wok, it looks it is an ok family style fried rice to me. Fried rice basically is just a left over food. (And msg is definitely not needed in family) I would not add lemon juice as it doesn't tastes Cantonese, but i would say there is some part in China like sour.

I know Vince i love your channel, but the world just need to accept rhe evolution of food. How our current cuisines came to be was the experimentation of ingredients in different cultures. Think about it, how were the first people who had the idea of making fired rice or spaghetti Bolognese? By experimentation!

Adding the balsamic vinegar was a bit weird. Not frying the egg and calling it egg fried rice was just... nope. However if BWB cooked it for me, i would still eat it.

have to completely disagree with the take. Is Babish version a "proper" fusion Italian Asian dish? Probably not even if it is good and to be honest, I don't think it is bad from the ingredients he uses. Even with the purpose of the video aside (which is to clear out the fridge), Italian "fusion" fried rice is not a thing to even say which way is appropriate or proper, there is no "right" way to it yet. The take is up to individuals and you evaluate based on everything including the culture essense of the dish. In that aspect, I would say it is a fail (cause I doubt you can distinguish the essense of an Asian fried rice or Italian flavor) but it is not a problem. He has an idea and he tries it out, which is the spirit of fusion food and innovation, of course it can fail and that's fine. He is cooking on the basis of understanding flavour combination and using proper technique to create something, which is actually useful to learn as homecook and one should not be limited by "recipe" but should still understand the fundamental to not create abomination (conflicting flavor, undercook, overcook, etc). At the end of the day, saying only chef with experience in both cuisine know which work and which doesnt and can create something fusion is such an elitist way of thinking.

A bit late Vincenzo, but if one day you’ll revisit that “Italian fried rice” of yours, maybe remove the passata and add freshly chopped tomatoes instead. Also, instead of soy sauce, maybe use modern garum. Who knows, the flavor might just work with Mediterranean proteins like anchovies.

As an Italian my mother would make us rice and sauce and peas with Parmesan all the time.. lemon?? That is gross and the way the Mungo Pronounces italian is offensive. Lemon with vinegar cooking in tomato sauce is what you use for a cold rice dish. He must be stoned

It really is more of a weird stirfry with Italian flavors. Egg fried rice is meant to have fried egg and fried rice. This seems more like Reheated Rice Pilaf with a raw egg on top.

Well, I'd say italian fried rice would really be Arancini. I think yiu don't see Italian Fried Rice probably because they tend to use a medium grain rice (good for rice balls) vs long grain rice which works best for fried rice. Mind you, you can certainly make a tomato fried rice, mixing Italian and Chinese seasonings to create a new fusion dish. All dishes change and are influenced by other cuisines. Remember, many of those foodstuffs we associate with Italy came from other places but Italians blended them with their foods and techniques to create what we think of now as classic Italian cuisine. Hell, look at Haka Cuisine (Chinese blended with Thai, Vietnamese, Indian, Cambodian as the Hakka people traveled from the East to the West) or Chinese-American (not the other way around ;) food

I had frying rice since 10 years old now with 30 years of experience. 1) Too low heat to begin with, I would have finished the fries rice in less than 3 minutes. 2) Fried 🥚 in the wok first. 3) Balsamic Vinegar in there during cooking is bad, you're ruining precious balsamic vinegar, season it at the end. 4) 🍋 juice again season at the end. 5) Rice should be somewhat dry.

My suggestion for Italian fried rice would be. Just 🍚, 🥚, 🧄, 🧅, 🥕, 🫒, salt, black pepper and of course EVOO at medium heat. High heat will kill precious EVOO so don't.

I do agree that this rice doesnt seem all to appetizing 😬 that combination of ingredients does doesnt seem right. However, i dont agree with always leaving authentic recipes alone 😅 someone once came up with those authentic recipes, who's to say you cant create something new and amazing? 😁 i do agree you do have to have a good basic knowledge of cooking to be mixing cuisines, but you could also experiment within just the one cuisine and perhaps just try one or two ingredients from another cuisine instead of turning an entire dish into something completely different 😅 For example ive been using msg in some pasta dishes and also put it onto my Dutch potato dish 🙈💀 Those dishes didnt turn into a weird fusion kind of thing, they are basically still the same, but just a touch of msg elevated their authentic flavours 😁 at least, that was my experience with it.

Saying "there's no point" is missing the point entirely. Open your mind to experimenting with new flavour combinations. No matter what country or people think they own recipes or flavours, or what particular ingredients are traditionally used for, there's no one right way to cook - and we'll never find new combinations that taste good if we have your attitude.

I loved it from an Asian background. It does make sense. Use basil for freshness instead of green onion. Put lemon on shrimps and seafood. Makes a lot of sense. I will make it for sure. Thank you.

Leaving authentic food alone is the stupidest advice you can say to anyone. Trying and mixing different things is how new dishes are born. If the new dish is horrible, don't do it again but to not even try is just wrong. How did Italy come up with so many different variations of the "same" dishes? By leaving the same ingredients alone? Fusion is a beautiful thing. Should all fusion survive? not at all but out of 10 "new" dishes, one is bound to stick and stay forever.

I guess it's ok to make fusion, respect the techniques and the essence and than play on the flavors. Maybe miniatue meatballs (although lots of cousines uses mince that way) i love aceto balsamico in everything, and than there is pecorino and so on. But like you said you need knowledge... an lots of it.

This is what is called in Austria a "Greschtl" which means a bunch of sauteed (roasted) leftovers that you season edible with an overdose of spices. It is spiced dogfood, in essence. Che cazo.

Its an ingredient.. Now if you tell passata or like tomato rasam then sure they are Italian and Indian respectively.. Its more so to do with the dish rather than the ingredients

From the bastardized versions I stand with Vincenzo. I'd eat the one with babish like until the half of the video, only sofrito with meatballs and rice, maybe some passatta, and that's it! not all that balsamic and pesto, that was way too extra and the raw egg yolk, hell no!

personally, i think fried rice is just a cooking technique... as long as you dont pass it as a chinese style fried rice, it's not really a bastardization or disrespectful... any culture that have rice in thier diet, you can guarantee they'll have thier own version of fried rice. at the end he put some lemon juice into it, that is something that we do here in south east asia, although we dont use lemon but we use lime, small golden lime, that is because our fried rice is often spicy, and spiciness and sourness are best pal.

It's not a dish for me but I see his steps. He deglazed with balsamic vinnegar, which must be harsh for an end flavour. The addition of pecorino must make his rice very abbrassive. I do enjoy strong flavours, so I'm on the fence. I would've added more herbs to the dish. Parselyis awesome because it helps meld and combine the ingredients. Parsely is severely under rated in sauces. It is the mediator, imho.
