For the critiques that doesn't understand. The egg was slowly cooked in the warm mixture. Chef 101. it's called tempering.

You're correct! But that's the way it's pronounced in Jamaica, either way it's acceptable there.

Rick,question.the left over liquid mix with raw egg inside it contain bacteria and likely to taste raw or spoil the product.i think syrup or honey best glazing

Chef Ricardo, I love this recipe but I find that my bun is too light and crumbles when cut. How can I change this?

Basically the taste and texture is great, but it crumbles when I try to cut a slice. I’m not sure if I’m making it too light. I followed the instructions but I’m not sure how to make it stick together better. It’s still nice and moist so I’m not sure what’s happening.

Normally a little guava jelly is used, like in older Grace recipes but now we are told we can use some orange marmalade or strawberry jam. It's for moisture. If I add the honey, though, I don't bother with the jam - too many sweet things.
