Life off grid isn't much different than the life we had before we moved off grid, except we have a lot more TIME. Time to do the things WE want to do now that we're retired...versus working on someone else's schedule. In this season of my mom-life, homeschooling is my first priority along with the usual homemaking duties; cooking cleaning & lovin' on my sweet family! Come along with us for a realistic day in our life here on our off grid Alaska homestead. We're giving the chickens some outside play time, doing homeschool & making some homemade meat stock. Hope you enjoy this glimpse into our day, thanks for joining us for another video!

FERMENTED CARROTS: (Makes 1 quart)
Carrots
1TBS Salt (ex: sea salt or pink Himalayan salt, not iodized table salt)
1 Garlic clove
Purified water
1 clean quart jar
Place 1 garlic clove & 1 TBS salt in quart jar. Peel & quarter carrots. Pack carrots into jar as TIGHT as you can squeeze them in. Fill jar with water, make sure carrots are completely submerged. Put a coffee filter or clothe over top of the jar, secure with a string or jar ring. Allow to ferment on the counter at room temp for at least 5 days. (I prefer 10 days, longer the ferment, more tangy the carrots). Remove coffee filter or clothe & secure a lid on the jar, place in the fridge & enjoy! They'll be good for months in the fridge!
MEAT STOCK:
Big pot
Salt/pepper
1 medium onion
2 Garlic cloves
2-3 carrots
Any other veggies or herbs you want to add
2TBS Apple Cider Vinegar
Bones with meat still on. (Your choice, whole chicken, fish, beef bones etc)
Place approx 1-2 quarts of water per pound of meat/bones into your pot. Add all of your veggies & seasonings. Simmer on low for 3-5 hours stirring occasionally. Strain the solids off & pour stock into clean containers/jars & store in the fridge for up to 5-6 days. Can also be frozen!

I had a pretty bad ulcer years ago and a couple of the natural things I did to help heal it was to drink pure papaya juice with aloe vera in the morning on an empty stomach. 6 ounces of papaya and 2-4 ounces of aloe vera (the clear kind that has no flavor). Then I bought some papaya enzyme chewable pills. I would chew on 4 of them after each meal. Papaya helps break down your food and digestion. These three things helped me immensely. Hey Tina! Love your videos, I do look forward to them. I started keto a few years ago, I followed Dr. Ken Berry. A friend got me started on it, then she went carnivore to heal her gut. I tried it too, loved it..I felt great..stayed on it from February to December. 😅 Holidays broke me..having trouble getting back to it, but, I can tell such a difference in the way I feel. About five months ago I had to rush to the ER with stomach issues, I didn’t know what was going on. Went to my doctor next morning, did blood work and had lost half my blood supply! Had to transport to hospital to get blood transfusions and cat scan, etc. found out I had three bleeding ulcers and had to completely change my diet. They put me on strong acid blockers. But the one food I absolutely miss is tomatoes, cuz too much acid. I mean, a garden fresh tomato is hard to beat. So I can relate to the ulcer issues girl, it’s not fun, it’s a sacrifice for sure when you love to eat certain foods and then have to stop them immediately!

Omgoodness 😱! Thank you so much for the Muenster heads up! We rescued our Chesapeak Bay Ret/Lab 5 years ago. I made her raw food daily to heal her torn CCL ( she came to us with it) and then life happened and I couldn’t do it all ( busy family and my own health issues) I have tried for years to find the ONE she would actually like eating…Got the pork and chicken and she loves it so far ( mixing it in her normal food she eats around that and finishes the Muenster) Plus we recently got Ryo - a Heeler/ border collie pup to be her friend and that one! She scarfs it down and will steal Lola’s! This valley girl 😜 thanks you. Love your video’s Tina and look forward to your family’s adventures every week!

I love pickles, pickled okra, now I get to try and make pickled carrots. Over the winter I have saved all the pickle juice from jars of pickles I have bought and have cucumbers growing, (I hope), to fill all those jars. Thanks for the pickled carrot recipe. 🙂

I stumbled upon your channel yesterday & Lexi’s! 😀 I’m so happy I did! As a mama of 3 (our two oldest are 22 & 20 & our youngest is 14) it made my heart happy & excited for Lexi & her new adventure!
