1 cup rice
milk from 1/2 coconut
1/2 can pidgeon peas
1/2 can red kidney beans
1 tbsp. cook up seasoning
casareep to color
2 stem celery
2 stem marrid man poke ( sweet basil )
2 broad leaf thyme ( puddina )
2 stem scallions
1 stem fine thyme
1 small onion
Poi baji ( thick leaf baji ) optional
pepper to taste
black pepper to taste
salt to taste
For the Chicken

6 drumsticks approx.
2 cloves garlic
1 broad leaf thyme ( puddina )
chicken seasoning
pepper to taste
black pepper to taste

This looks good. Probably the best I've seen in the instant pot. Most of them the rice is over cooked this one the rice is nice and loose. Great job 👍🏽

I do the same with mine but yours looks allot of better, just a suggestion..you can use the saute option to cook the chicken first, then add your rice with the coconut milk ingredients afterwards to the chicken then pressure cook on high for about 25-30 mins

Good recipe RNG I've been using a IP for years now to cook all guyanese dishes etc. Very useful pot. You can bake in them also. do a whole chicken too. Cheers.
