After viewing the the video and reading most comments...in indonesia-west java we also know a food considered native and dear to us called putu..so surpised with the similarity...and here its sold by a seller carrying a mobile steamer that generates a whistling sound (which also informs us all the presence of the 'putu-man' or tukang putu as we call it. Usually chidren will run back home to get a plate and back to buy putu)..however the putu flour is made with pandan leaves for colour and filled in cylinders made from bamboo ...and filled with coconut sugar at the center...also when done steaming the putu is pushed out of the bamboo..and the green pandan putu log is then garnished with grated coconut...only here is considered as a dessert ...so surprised to learn that is also a part of heritage in other countries..must be the work of travelling ancestors in the past...wish one day to learn how this recipe originates and spreads..greetings to all

When I went to the famous Dhe Puttu Restaurant in Kochi I was surprised to see so many tourists from Asia eating puttu. We have come full circle like the Portuguese explorers eating similar food in all of Asia on the coastline. Love puttu.

Thanks for sharing. I had tears while watching this video. Putu or PouTou is my favorite sweet when I was young, more than 45 years ago. My history on Putu or PouTou: On sunday morning, I used to go to the market of Riviere du Rempart on the north of Mauritius with my DAD Guruduth Jheelan from Gokoola. I never missed my PUTU. When I return back to Mauritius for my holidays, I can still get them but there is almost no vendors than before. Will try to make some for my kids, but I don't have a cylinder. Bye, Au revoir Shiam

Hi! Thanks for sharing your sweet memories. I realize that Puttu is served in many countries across the world and known by different names. It is served plain , savory or sweet as you mentioned. What do you add for sweetness? Sometimes I add layers of sweetened coconut with cashew nuts in between the soft fluffy puttu. Or layers of savory meat can be added ad well. Happy Cooking~

Also, If you do not have a cylinder, you can just prepare the putt flour exactly the same way and steam it in a regular steamer pot, on the top perforated layer, above and not ouching boiling water below. Cook covered and serve. It just won't have the moulded shape. You can also use a coconut shell half with one hole on the bottom for steaming puttu. And then there's the microwave method : How to make ' PUTTU' in the Microwave : Quick Tip Video by Recipes 'R' Simple although it must be served immediately. I always prefer the old fashioned method though.

The cooking process is similar to the Filipino puto solot and puto bumbong. Like how Indonesia and Malaysia treats putu bumbung, puto bumbong is considered a snack or a dessert.

+Alexandra Akhoun rice flour is extremely finely milled rice ( uncooked / raw ) rice.. although it is possible to grind rice at home , you would need heavy duty blender or a grain mill to crack the grains into such fine powder. 'Ground rice' come in various levels of graininess. Rice flour is Super 'powdery ' hope that helps... i prefer to buy rice flour as it is quitw wasy to find in supermarkets

+Pascale Devalet i do not recommend an idli steamer. It would not hold together and would be such a hassle. You cud use a heatproof glass placed on a steaming rack inside a big enough steamer. Or u cud try the microwave puttu.. Microwave puttu doesn't give as good results as this one though.

+boodhoo zeehan Possible reasons.. the prepared moist flour may be too dry. or may have been out too long and lost moisture. You can try adding more coconut and another time is AFTER cooking time leave the putt in the cylinder for a while before turning it out.
