RED CHILE PORK FOR TAMALES: Step-by-Step How to Make Shredded Pork in Red Chile Sauce for Tamales

If you're looking for the perfect Red Chile Pork recipe for Tamales, look no further. In this video, I show you step-by-step how to make shredded pork in red chile sauce. Read on for the recipe.
Red Chile Pork for Tamales
4 - 5 lb. whole pork butt (cut into large pieces)
1/2 large onion
5 - 6 garlic cloves
1 cube beef bouillon
salt to taste
2 bay leaves
Place pork meat in large pot and cover with water. Place on stovetop over medium high heat. Add onion, garlic cloves, beef bouillon, salt and bay leaves. Stir and let come to boil. (Skim foamy impurities that form on the top.) Reduce heat and let it continue to cook at a low boil for two hours.
Remove cooked meat and place in bowl. Let cool before shredding with forks.
For Red Chile Sauce
approx. 12 New Mexico red chile pods, stems & seeds removed
3 garlic cloves
1 Tbsp. Mexican oregano
1 Tbsp. ground cumin
salt to taste (approx. 1 1/2 tsp.)
Place cleaned chile pods in a seive with a bowl underneath and pour boiling hot water over it. Let it sit in hot water approx. 10 minutes so that chile pods rehydrate and soften. Remove softened chile from water, but reserve chile water. Place chile in blender or food processor, along with garlic cloves, Mexican oregano, cumin, and salt. Pour in 4 cups of reserved chile water and blend until you are left with a smooth red chile sauce. Then heat a large skillet on the stovetop over medium high heat with just enough oil to coat the bottom of the pan. Once hot, pour in the red chile sauce. Let it come to a boil, then reduce heat and let it simmer on low for ten minutes, stirring frequently. (If making your own tamale masa, remove approx. 1 cup of chile sauce and set it aside for the masa. Otherwise, continue on with recipe.) Add shredded pork meat to the red chile sauce and mix to fully combine. Remove from heat and let cool before using it to fill tamale masa.

Attempting to make Tamales has always been intimidating. I have always been told that it takes to long for one person to make alone. It will take all day and you will need help to get it done. Don't even try just buy. You make this recipe look doable with success. I am also from New Mexico native to Albuquerque and am addicted to Red Chile and love Tamales. I will attempt to make your recipe and hope for victory in my attempt. Thank you for your step by step video. Look forward to seeing more NM recipes.

I prepare my meat and sauce the day before - that took me 2-3 hours. The second day I made my masa dough and prepared about 40 tamales in 4-5 hours. (I dont do more than like 5 cups of masa flour if it’s just me making.) Then I let them steam for two hours, but I didn’t have to do anything. I did all the cooking myself. I didn’t have to do the dishes. We ate them for a couple meals and then froze the rest for lunches for my wife for work.

Last week my wife and I made some tamales using your masa recipe. They were the best tamales we’ve ever made. I like hot food so if had thrown a few chile pique it would have been perfect! We’re from Velarde NM.

My sister and I watched your Masa video and our tamales came out delicious. You made it very simple to take on. We made red and green tamales. It was one of my best times spending it with my sister.

I've missed having tamales badly enough I've considered ordering them frozen from NM but too expensive. They seemed too complex for me to make but with your videos I'm going to order the ingredients (except pork and masa, which I can get here) and give them a try. Wish me luck!

Looking forward to trying along with the masa recipe. Just trying to make tortillas and tamales from scratch (being black), is getting really expensive.😮 Ok, so the leaf lard was $18.75 + shipping for 14oz not even a pound, can this work if its 2oz short? And do I still use baking powder if using leaf lard? I want so bad for this to turn out it's only my husband and I, I plan to freeze what we can't eat. I don't make chile from powder very often, so my best guess for this amount of meat, would be to triple this recipe: Red chile sauce from powder: 2 Tbsp. oil 2 Tbsp. flour 3 Tbsp. NM red chile powder 1/2 tsp. garlic powder 1/2 tsp. salt 1 1/2 cups water Heat 2 Tbsp. oil in a large skillet over medium low heat. Add 2 Tbsp. flour and blend for 1 minute. Add in chile powder and stir for 30 seconds, keeping in mind that chile scorches easily and you don’t want it to have a bitter taste. Have your water ready to go and carefully pour it in. Stir with a whisk to break up any lumps. Let come to a boil. Add garlic powder and salt, and mix to combine. Simmer a couple more minutes then remove from burner. Hope this helps!
