Love this recipe!!! To add even more wonderful flavor, Roast cauliflower instead of boiling!! Less moisture, a little firmer & the flavor is 100% better. I add herbs province's, garlic & onion powder, seasoned salt. Fabulous. 😊

Cauliflower mash is the best! Good on the glycemic index and taste's amazing. Use a mix of black lentils to darken the filling and it does look like mince meet, kind of. Ive only ever used sweet potato mash over it so this recipe is another winner from Mr Fabulous Rik! I love cauliflower cheese!!!!! Inspirational once again chef!

And the recommendation from medics is to eat loads of carbs and starchy veg and a bit of protein and little fats - let the metformin do its job. Goes against everything we know about diabetes and pre+diabetes - I wonder why (I think we know). Hope she goes on and keeps well taking her health into her own hands.

Thank you for posting this. One of my children has been ovo/lacto vegan by choice since the age of eight. I have been looking for recipes that are budget friendly for eight years. He happens to like lentils a lot as I use them as for a ground beef substitute quite frequently. This may be the first vegan shepherd's pie recipe I have run into.

My kind of dish; wonderful combination of two dishes. You've (re)invented a Gardener's pie. Not only vegetarian it's also low-carb. Replacing butter with oil, cream with oat milk say and using vegan cheese 😂 , it's vegan too!

This is my type of dish - looks delicious and full of flavour. Red lentils are so versatile and affordable, I make a similar base for a lasagne with Italian flavours. I find any dish with a tomato base is always better the day after and the starch in pasta becomes more “resistant” when allowed to go cold (completely re-heated is OK). Butter has shot up in price in the UK and for 1 litre of olive oil from Lidl this last week I paid well over £6 (I think there has been a harvest problem but wow). I like that your recipes aren’t fiddly, anyone can have a go and you’re teaching basic skills that some people will have missed out on - great stuff.

Oh my goodness!! Now this morning I pulled something out of the oven and I said, , "ohhhh would you LOOK AT THAT!!" And that was scalloped potatoes made from leftover potatoes onions that have been cooked in butter with thyme, a little sausage, cheese, milk and so on. And it was beautiful. Your channel has influenced me a lot. Rik and You make lots of vegetable dishes! I've made the fried pie. It was wonderful, I'm going to make the rumblydethump, which looks amazing, And I have lentils in the cover because I love lentils! Now you could have stopped at just a lentil mixture and I would have eaten that but putting it in a casserole and putting the cauliflower mash on top to make it a shepherd's pie??? WOW BRILLIANT BRILLIANT🎉 You know meat is so costly and even the cabbage here is like $6. I'll be making this and I'll be making a full casserole of it so that I have lots leftovers for the week and that will be so delicious.❤❤ Thank you again for another amazing recipe. No, it's good. Love your laid- back comfortable style. So I can fully attest to the lentil mixture being absolutely delicious, and so is the creamy cauliflower mash! So have now assembled and its in the oven. I'm sure it will be delicious! BTW. Did rumble thumps and my daughter couldn't stop eating it! She announced it was 'comfort food' and I hadn't mentioned a word (promise). Will definitely try out more of your recipes. I've lived in Australia for 50 years but growing up in UK was lucky my mum was a good British cook and really enjoying your recipes from the old mother country.

I make similar and if Im making a big dish for family or friends (normally theres just 2 of us) I will use 2 or 3 different beans and lentils. So I make the basic red lentils with tomoato, but add in a tin of green / brown lentils, chick peas, or borlotti beans that add in texture too. I do like a dash of Worcestershire sauce or even a spoon of HP brown sauce in the base mix.

I made some lentil some a couple of months ago, it was delicious! However, I was so full and so bunged up I couldn't eat or poo for days afterwards - am scared of lentils now!!! The Cauli-Spuds are delicious imo, I've been making mash like that since my four were little as a way of getting another veg into them under cover! My veggie-type substitutes: Extra Virgin Olive Oil, Braggs Liquid Aminos, one forth the amount of cauliflower would be cabbage; the other forth would be minced Collards. I might get crazy and mix in two well-beaten large eggs. Think that would do it--for now.
