Yes you can make it a day ahead. Just store in fridge, whenever you use it just bring it out to room temp and whip it so that it's smooth again ☺️

I've made Ermine frosting once which I flavored vanilla. Can you add flavorings such as purees vs extracts? If so how much? I don't have a pan that size or deep. What other pan sizes would this batter fit into? I like this recipe because usually cream cheese frosting is used with a red velvet cake but not everyone's a fan. Since you used the same amount of butter that I use for a 7 egg white SMBC I'm trying to decide which one to go with. I know I can use other flavoring methods with SMBC but if it's possible with Ermine I'd rather go that route. Please respond as soon as you can. Thanks... 😉

Hi Tammie. Yes you can definitely add flavour like vanilla extract or even puree. Just add a tsp at a time so that you don't upset the consistency of the cream. You can use any pans like 7 inch square or round or even a flat pan that enable you to cut into 2 or 3 sheets. Hope I've answered you ☺️
