Hi Chef Michael 😊Hope you are doing good. Which is your favorite frosting and how does Ermine frosting taste? Love your recipes, thank you so much for sharing😊🙏🏻🙏🏻🙏🏻
@michaellim
@michaellim Жыл бұрын
The taste is subtly sweet with a smooth and velvety texture. The presence of butter gives it a rich flavor, while the cooked mixture of flour, sugar, and milk adds a delicate sweetness. Compared to traditional buttercream frosting, it is less sweet and more light and fluffy. Despite its relatively subtle flavor, ermine frosting pairs well with a wide range of cakes and baked goods. It was traditionally used to frost red velvet cake. Its lightness allows it to complement rather than overpower the flavors of the cake it's paired with.

You can replace beet juice for a healthy alternative. This way you don’t consume chemical.
@michaellim
@michaellim Жыл бұрын
Certainly, if you're using beet juice in place of food coloring in your red velvet cake, you'll need to slightly adjust your recipe. Beet juice adds extra liquid, so you'll have to either reduce other liquids in your recipe or add a bit more dry ingredient to balance it out. Also, remember that beet juice's natural color may not be as vibrant as artificial red food colouring once the cake is baked. The heat can dull the color, but the end result can still be a beautiful and natural shade of red. So, make sure to test and adjust the recipe accordingly to maintain the consistency and taste of your cake. Happy baking!

Hi Micheal, I just saw your oven settings video. It is very helpful for the beginners. Which mode to select to bake a cake in an oven ? Is it Top and Bottom Heating elements or any other mode? Thank you
@michaellim
@michaellim Жыл бұрын
The baking mode that I usually use for my baked goods involves the top and bottom heating elements without the fan. Nevertheless, you should follow the baking instructions from the recipe you're using. For example, if you're following a recipe from a US-based KZbin channel, they probably use convection mode or broil.

After you frost it Do you put it back to chill?
@michaellim
@michaellim 10 ай бұрын
After you have applied ermine frosting to your cake or cupcakes, it's generally a good idea to put them back in the refrigerator to chill. This helps the frosting to set and maintain its texture, especially in warmer environments. Chilling also makes it easier to slice the cake with clean, neat cuts. However, ermine frosting is more stable at room temperature compared to many other types of frosting, so if you're serving the cake within a short time, it's not absolutely necessary to refrigerate it. Just be mindful of the ambient temperature and the time the cake will be sitting out.

Will this frosting be stable at room temperature in a tropical climate?
@michaellim
@michaellim Жыл бұрын
In warmer climates, bakeries typically store their frosted cakes in refrigerated cases to maintain their texture and integrity. Ermine frosting, while more stable than some other types of frosting like whipped cream, can still become soft in warm or tropical climates. It's made with butter, which can melt or become very soft at high temperatures, and this can affect the structure of the frosting. If you're serving a cake with ermine frosting in a warm environment, it might be best to keep the cake in an air-conditioned space or a cool area until it's time to serve it. If that's not possible, consider chilling the cake in the refrigerator to help the frosting stay firm, and then take it out just before serving. Remember, all cakes with frosting will be affected by temperature to some degree, and the stability can also depend on the exact recipe and technique used.

First time heard of this frosting ...the cake must store in the fridge right?
@michaellim
@michaellim Жыл бұрын
Ermine frosting, while not as common as other types like buttercream or cream cheese frosting, is a delightful option with a light and fluffy texture. Regarding storage, it does depend a bit on the environment. Ermine frosting is relatively stable at room temperature for a few hours, so it's fine to leave your cake out if you're serving it the same day. However, if you're in a hot climate or you plan to store the cake for more than a day, it's recommended to refrigerate it. The frosting contains butter and milk, which can spoil or soften excessively if left in warm temperatures for extended periods. Just be sure to take the cake out of the fridge about an hour before you plan to serve it, so it can come to room temperature. This will ensure the cake and frosting have the best texture and flavor.

@michaellim
@michaellim Жыл бұрын
This recipe is for a pan size of 18cm. I used a 20cm cake ring to frost the cake. For a pan size of 22cm, you can add 50% more ingredients. For a pan size of 24cm, you can double the ingredients.

Could cornstarch be used instead of flour or is there a structure need for the flour?

@pppel7500

Just wondering if there would be a flouryr taste. I use cornstarch for homemade puddings.
@michaellim
@michaellim Жыл бұрын
@Pp Pel Yes, cornstarch can be used as a substitute for flour in ermine frosting. It acts as a thickening agent, similar to flour. However, the end result may have a slightly different texture as cornstarch tends to create a glossier and potentially firmer result than flour. The flavour might be slightly different as well, as cornstarch doesn't have the same taste as flour. Generally, if the flour, milk, and sugar mixture is cooked properly in the process of making ermine frosting, it shouldn't leave a floury taste. The cooking process helps to eliminate any raw flour taste. However, make sure to cook the mixture until it has thickened to a roux-like consistency and then cool it completely before adding it to the butter. This will ensure that the flour is fully cooked and integrated, resulting in a smooth, sweet frosting without a floury taste. Remember, when substituting ingredients, it's often a good idea to do a small test batch to ensure you're happy with the taste and texture before making a larger batch.
