the recipe was amazing and so easy to make. i used half of the recipe. instead of baked them in cups, i baked them in 7" pan and it turned out as an outstanding cake. so moist and not overly sweet. Thankyou so muchh.

so 1 and 1\2 oil is not too much? i got suprised as i usually use 1/2 cup of oil for every 2 cups pf flour..please enlighten me!

Milo Micey oil makes the cupcakes moist and the quantity of flour is 2 and 1/2cup

Hi sarah! I'm Gabriel from Singapore and am a very very BIG fan of your show and TMS show, both old and new seasons. I've been trying a lot of your recipes even though I'm a novice cook and only do so for special occasions. Could I ask how would you advise to freeze cupcake batter and how long it can last in the freezer? I hope and await your reply, take care cheers! You should bake the cupcakes, then freeze them. They get a little sticky on top when they defrost, but that doesn't matter since you can frost them after. thanks for watching in Singapore!

Its Americolor gel food coloring. You might wanna google it. I dont know if its available in France or not.

Hi Sarah, thanks for making this! Two questions - why was the baking soda added at the end with the vinegar instead of with the dry ingredients at the beginning? And why were the cupcakes lined with two liners? To answer your question, yes I make red velvet cake at home :)

well I don't know about the two liners but i do know that in a recipe for red velvet, it is necessary to add the baking soda and vinegar because it makes the cake fluffy. And before when there was no food colouring the mixture would make the cupcake have a very light redish tinge to it

Instead of buttermilk, use 1 tbsp of lemon or vinegar and add it to your milk.

Traditional red velvet only used baking soda and vinegar and supposedly it gave it a red tinge. Nowadays, we like everything to be chock full of dye though. It's just a tradition, and gives red velvet that signature flavor.

Cake flour is lower protein content than AP flour and gives a finer crumb and is ideal for cakes

+noah pakan Yes, you can use all purpose flour. The recipe will still work, but your cupcakes might be a little more dense than the cupcakes in the video. After watching 1,001 KZbin cooking videos, I know that cake flour is almost impossible to find outside of the US. There is also a trick to make your own cake flour: For every one cup of all purpose flour, remove 2 tablespoons of flour and replace it with 2 tablespoons of corn starch. Shift together well. Some Americans do this because cake flour is about 4 to 5 times more expensive than all purpose flour. A batch of cupcakes should not cost a small fortune. :-)

Fun fact: cake flour does not exist in New Zealand supermarkets. Living here has been an adventure in learning to cook with NZ's ingredient limitations and learning to use metric measures.

Oil makes cake moist while butter makes it cakey/fluffy. A mix of the two will give you a moist and fluffy cake.

Yes you can. Most of the recipes out there are using all purpose flour. The cake flour make you cake lighter

Yes you may because we have made these cupcakes for like a long time we have used all purpose flour to the half of the batter and we used cake flour to the half of the batter again and the part of the all purpose flour is fluffier than the part of the cake flour, and my mom likes the part of the all purpose flour because the part of the cake flour is so strong the taste of it it so strong

Georgenes Basa for 1 cup buttermilk: 1 cup of milk + 1 TBS lemon juice/vinegar OR 1/2 cup yogurt + 1/2 cup milk hope this help

You can make it by just removing a teaspoon of all porpuse flour and adding a teaspoon of cornstarch
