I just recently subscribed to your channel, and I am so glad I did! This was the first recipe I tried from your website and they've turned out amazing :) I actually divided the recipe by four to make a batch of 6 cupcakes as I have a smaller oven. loved the addition of milk powder to the frosting, they are much better consistency and look great after piping. Will try more recipes now.

Nick you're just fantastic. Tried these and it turned out beautiful in taste and texture except for one thing, I dislike ever so slightly the flavour of oil and I just love the flavour of butter. So question for you would be, why oil? Why not butter? Can one use clarified butter as a compromise?

Hi Nick ! I'm making the cupcakes right now and there are some contradictions in the recipe: do i cook them for 30 minutes or 20 ? Also, the recipe for the frosting is for 12 cupcakes, and the recipe for the cupcakes is for 24, which kinda messed up my thing because i couldn't buy more than 250g of philadelphia. This is the third recipe I'm trying and they always turn out great, keep up the good work !

+Bucky Barnes it depends on your oven. Mine bake for 30 min. Will fix that in the recipe. You can make the frosting stretch to frost 24 if you don't first as high as I do.

Hi Nick! I have a question, what's the difference between creaming together butter and sugar, and crumbling the butter with the dry ingredients? I noticed some cupcake recipse use the creaming method. I'm awfully confused why though haha.

Creaming butter and sugar does two things: incorporate air and dissolve sugar. Rubbing the butter into the dry ingredients coats the butter with the flour.

Butter in cakes or cupcakes makes the batter go dense , or heavy.. If u refrigerate cupcakes with butter inside of them you'll notice they'll harden when you're ready to eat them,, because the butter in the batter is back to its block form.. However oil gives the batter a moist , fluffy texture to cakes , and doesn't make them dense.. Im sorry but u cannot replace butter with oil or vice versa ... Simply because oil is unsaturated fats and butter is saturated , hope this helps! :)

+Humera Amla Butter gives a better flavor! Never put cakes in the fridge. It can dry out. It doesn't really make the cake dense. Oil does make for a more moist cake but butter adds a better flavor. You just have to decide which you like better.. ;)

In my experience nothing. I've tried making my own buttermilk using a tap of vinegar or lemon juice per 250ml cup of milk but they just don't come out as moist. You'd could substitute it with milk or home made buttermilk. :0)

I want to make half so for 12 cupcakes... i normally just half all ingredients but when it comes to 3 eggs is it better to do 1 egg or 2 eggs?
