There's no shame in using store-bought croissant dough. Making those are so technical and difficult. I tried making croissant from scratch once by hand, and it leaked butter, and the croissant came out deflated. I almost cried. Probably out of disappointment and exhaustion. Love the spoon lick on 3:57. Waste not, want not, b.

Looks delicious you keep your man belly happy have you used a commercial steam microwave oven in the kitchen it's amazing the ings they make these days for cooking equipment if someone buys the building for condo redvement I just pack up move it all in a moving van to a new location

It's an interesting combination you put together there. How does the sorbet (which is a water ice without fat) pair with the creamy-crunchy cheesecake? Would subbing in a pear ice cream or gelato be overly rich? Just trying to imagine the mouth feel of the two elements together...

Exactly! The cheesecake is heavy and rich, with some fruitiness. I balance it with a tart but sweet sorbet, so you don't get too much richness. The Pears contain pectin, a natural thickener, so it keeps a creamy texture and doesn't feel icy.
