Resep Nasi Krawu (untuk 10 porsi)
Bahan:
1,2 kg sapi sengkel
2 liter air
Bahan bumbu halus:
10 siung bawang merah
5 siung bawang putih
4 butir kemiri, geprek
5 cm lengkuas, iris
3 cm kunyit, bakar
2 sdt ketumbar butir, sangrai
4 cm jahe, iris
50 ml minyak
30 ml air
Bahan lainnya:
3 lembar daun salam
2 batang serai, geprek, iris
1 sdt kaldu sapi bubuk
½ sdt garam
½ sdt merica
½ sdt kaldu jamur / penyedap
1 sdm gula pasir
4 sdm Bango Kecap Manis
3 sdm santan kental
1 sdt asam jawa
800 ml air kaldu sapi
Bahan serundeng:
170 gr kelapa parut
3 cm kunyit
2 siung bawang putih
3 siung bawang merah
4 buah cabai merah keriting, rebus
5 lembar daun jeruk
½ sdt garam
½ sdt kaldu jamur / penyedap
2 sdm gula merah
Pelengkap:
Sambal terasi
Nasi putih
Langkah:
1. Presto daging selama 1.5 jam, tiriskan
2. Blender bawang putih, bawang merah, kunyit, dan sedikit minyak lalu tumis hingga wangi
3. Masukkan daun jeruk, kelapa parut, gula merah, garam, dan kaldu jamur, masak di api kecil hingga kering. Sisihkan setengah serundeng
4. Blender cabai merah keriting hingga halus kemudian tuang ke dalam sisa serundeng, masak kembali hingga kering, sisihkan
5. Blender lengkuas, jahe, kemiri, bawang putih, bawang merah, kunyit, ketumbar, minyak, dan air hingga halus
6. Tumis bumbu halus hingga wangi lalu masukkan serai dan daun salam, tumis hingga wangi
7. Tambahkan air kaldu, daging, santan, asam jawa, garam, merica, kaldu jamur, kaldu sapi bubuk, gula pasir, dan Bango Kecap Manis, masak selama 15-20 menit hingga meresap
8. Tekan-tekan daging hingga hancur
9. Nasi krawu siap disajikan

Nasi Krawu Recipe (yield 10 servings)
Ingredients:
1.2 kg beef shank
2 L water
Blended Spices ingredients:
10 pc shallot
5 clove garlic
4 pc candlenut, pounded
5 cm galangal, sliced
3 cm turmeric, roasted
2 tsp coriander seed, toasted
4 cm ginger, sliced
50 ml oil
30 ml water
Others:
3 pc bay leaf
2 pc lemongrass, pounded and sliced
1 tsp beef powder
½ tsp salt
½ tsp pepper
½ tsp mushroom powder / MSG
1 tbsp sugar
4 tbsp Bango Sweet Soy Sauce
3 tbsp thick coconut milk
1 tsp tamarind
800 ml beef broth
Serundeng ingredients:
170 g grated coconut
3 cm turmeric
2 clove garlic
3 pc shallot
4 pc curly red chili, boiled
5 pc lime leaf
½ tsp salt
½ tsp mushroom powder / MSG
2 tbsp palm sugar
Add-ons:
Shrimp Paste Sambal
Rice
Steps:
1. Pressure-cook the meat for 1.5 hours. Set aside.
2. Blend the garlic, shallots, and turmeric with a bit of oil. Cook until fragrant.
3. Add lime leaves, grated coconut, palm sugar, salt, and mushroom powder. Cook on low heat until dry. Set aside half of the Serundeng.
4. Blend the curly red chili until smooth, then add into the remaining Serunding. Cook again until dry and set aside.
5. Blend the galangal, ginger, candlenuts, garlic, shallots, turmeric, and coriander seeds with oil and water until smooth.
6. Cook the blended spices until fragrant, then add lemongrass and bay leaf. Cook until fragrant.
7. Add the broth, meat, coconut milk, tamarind, salt, pepper, mushroom powder, beef powder, sugar, and Bango Sweet Soy Sauce. Cook for 15-20 minutes until flavorful.
8. Press the meat down until it disintegrates.
9. Nasi Krawu is ready to serve.
